SPINACH SALAD WITH RASPBERRY DRESSING

Spinach Salad With Raspberry Dressing image

My doctor told me I had to add a little more iron to my diet and since I am not crazy about eating more red meat I found this recipe on the Food Network Website. I love this salad. I add either pecans or walnuts to give it a little more crunch.

Provided by DebbiF

Categories     Strawberry

Time 15m

Yield 4 serving(s)

Number Of Ingredients 12

1/4 cup olive oil
2 teaspoons Dijon mustard or 2 teaspoons honey mustard
2 teaspoons raspberry vinegar
fresh ground black pepper, to taste
1 teaspoon garlic salt
1 teaspoon dried basil
2 teaspoons sugar
1/8 teaspoon salt
4 cups Baby Spinach, washed well
4 mushrooms, sliced
4 strawberries, sliced
1/2 medium red onion, halved and sliced

Steps:

  • In a large bowl, whisk together olive oil, mustard, vinegar, pepper, garlic salt, dried basil, sugar, and salt until dressing is well combined.
  • In another large bowl, combine the spinach, mushrooms, strawberries, and red onion.

Tips:

  • To save time, use pre-washed spinach and pre-cut raspberries.
  • For a sweeter salad, use ripe, juicy raspberries. If your raspberries are tart, you may want to add a little bit of honey or sugar to the dressing.
  • Feel free to add other ingredients to your salad, such as crumbled goat cheese, chopped walnuts, or sliced almonds.
  • If you're making the salad ahead of time, wait to add the dressing until just before serving. This will help prevent the salad from getting soggy.

Conclusion:

Spinach raspberry salad is a refreshing, flavorful, and healthy salad that's perfect for any occasion. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a delicious and nutritious salad, give this recipe a try.
