A good friend shared this recipe with me years ago, and I've used it often. With the creamy sauce and lovely look of this dish, even people who aren't very fond of spinach seem to enjoy it served this way. -Sue Braunschweig, Delafield, Wisconsin

3 packages (10 ounces each) frozen chopped spinach, thawed
3 large eggs
1/2 teaspoon onion salt
1/2 teaspoon ground nutmeg
3/4 cup grated Parmesan cheese, divided
3/4 cup Italian-seasoned bread crumbs
16 boneless skinless chicken breast halves
Salt and pepper to taste
5 tablespoons butter, melted
CHEESE SAUCE:
6 tablespoons butter, divided
1/4 cup all-purpose flour
1/2 teaspoon salt
2 cups whole milk
2 cups shredded cheddar cheese
1 cup sliced fresh mushrooms

Steps:

  • Drain and squeeze out excess moisture from spinach. Beat eggs, onion salt and nutmeg. Add spinach and 1/4 cup Parmesan cheese; mix well. Combine bread crumbs and remaining Parmesan. Sprinkle chicken with salt and pepper; coat with crumb mixture. Place in two greased 13x9-in. baking pans. Spread 2 tablespoons spinach mixture onto each breast. Sprinkle with remaining crumb mixture; drizzle with butter. Bake at 350° for 35-40 minutes or until chicken juices run clear. , For sauce, melt 4 tablespoons butter; blend in flour and salt. Stir to form a smooth paste. Add milk; cook and stir until thickened and bubbly. Add cheese and stir until melted. Saute mushrooms in remaining butter. Stir into cheese mixture. Carefully pour sauce over chicken, or pour into a serving bowl and pass.

3 tablespoons plus 1 teaspoon honey
6 cloves garlic, minced
Coarse salt and ground pepper
4 bone-in chicken breast halves (10 to 12 ounces each), skin removed
2 tablespoons reduced-fat sour cream
1 tablespoon cider vinegar
3 slices white sandwich bread, torn into large pieces
2 teaspoons olive oil
3/4 teaspoon Herbes de Provence
1 bag (5 ounces) baby spinach
1 medium red apple, halved, cored, and thinly sliced
1 cup seedless red grapes, halved

Steps:

  • Make marinade: In a large bowl, whisk together 2 cups buttermilk, 3 tablespoons honey, garlic, 2 teaspoons coarse salt, and 1/2 teaspoon pepper. Place chicken in a resealable plastic bag (or baking dish); add marinade and seal (or cover). Refrigerate at least 2 hours or up to 1 day.

1 avocado
1 cup buttermilk

1 1/2 cups seedless red grapes, halved
1/4 cup salted roasted pepitas (hulled pumpkin seeds)

Steps:

  • Position a rack in the upper third of the oven; preheat to 425 degrees F. Cook the bacon in a medium ovenproof nonstick skillet over medium-high heat, turning, until crisp, 8 minutes. Delicious on sourdough with alfalfa sprouts and tomatoes! I've even wrapped these in pastry dough and baked them for a delicious picnic snack hot or cold.

16 ounces white meat chicken (cooked)
16 ounces fresh spinach
1 (1 1/2 ounce) box Knorr vegetable soup mix
1 cup mayonnaise

Steps:

  • 1. Blanch spinach: Bring water to a boil and add spinach. Boil for 30 seconds to 1 minute or until spinach is bright green. Drain water from spinach and submerge spinach into a bowl of ice cold water for a few minutes. Strain spinach and squeeze out as much liquid as possible. It helps to press spinach against a sieve or use paper towels to squeeze out the water. The result is a ball of spinach that can fit into the palm of your hand. Chop spinach.
  • 2. Pour cubed chicken into a food processor and pulse 5 to 6 times to chop.
  • 3. Combine spinach and Knorr soup mix in a large mixing bowl. Mix well with clean hands. Be sure there is no visible soup mix powder. Any soup mix powder should be completely absorbed by the spinach.
  • 4. Add the chopped chicken and mayonnaise to the spinach mixture and mix thoroughly.
  • 5. Cover and refrigerate for at least two hours. The chicken salad will keep in the refrigerator for up to 5 days.
