I have substituted pears and mandarin oranges for the strawberries and feta instead of blue cheese. Be creative! YUM!

4 cups torn iceberg lettuce
1-1/2 cups sliced fresh mushrooms
1/2 pound bacon strips, cooked and crumbled
DRESSING:
1/4 cup red wine vinegar
1/4 cup chopped red onion
3 tablespoons sugar
3/4 teaspoon salt
1/4 teaspoon ground mustard
1/2 cup canola oil
1-1/2 teaspoons poppy seeds

1 bunch spinach, washed and trimmed
6 green onions, thinly sliced
1 cup bean sprouts
1 cup thinly sliced mushroom
1 (8 ounce) can mandarin oranges, drained
1/4 cup toasted slivered almonds
1/3 cup honey
1/4 teaspoon shredded lime zest
3 tablespoons fresh lime juice
1 1/2 teaspoons poppy seeds
1/4 teaspoon salt
1/8 teaspoon ground mace
1/4 teaspoon vegetable oil

Be sure to make the dressing the night before! The original recipe called for 1 lb. of swiss cheese. I think that's a bit much and usually make it with 1/2 lb.

3/4 cup white vinegar
1 1/2 cups oil
1/2 cup sugar
1 tablespoon poppy seed

1/2 red onion, sliced thinly

1/2-1 lb swiss cheese, grated
1 lb bacon, cooked and crumbled
2 bunches spinach (I use a 10oz bag)
