STRAWBERRY AND SPINACH SALAD WITH HONEY BALSAMIC VINAIGRETTE

Strawberry and Spinach Salad with Honey Balsamic Vinaigrette image

This is a great easy summer salad, with a lot of options as to mixing and matching. Plus the salad looks pretty fancy. You can throw in any summer fruit or berry with this mix, blueberries and raspberries are a good choice, as are blackberries later in the season. The nuts are optional but a pecan or roasted almond adds a little crunch and more protein!

SPICY HONEY CHICKEN SALAD OVER SPINACH

Spicy Honey Chicken Salad over Spinach image

The sweet and spicy dressing on this simple salad is a real winner (and one of Brooke's favorites). You can buy canned chipotle chiles in the Mexican section of most supermarkets. They add the smokiness we usually get from bacon to this healthy spinach salad.

Yield serves 4

Number Of Ingredients 9

3/4 cup olive oil
1/4 cup apple cider vinegar
1 tablespoon plus 1 teaspoon honey
2 chipotle chiles in adobo sauce, seeded (if desired) and finely chopped
1 1/2 teaspoons salt
4 cups diced cooked chicken
2/3 cup peeled and diced cucumber
3 tablespoons finely chopped red onion
6 cups (about 4 ounces) baby spinach

Steps:

  • To make the dressing: In a small bowl, whisk together the olive oil, vinegar, honey, chipotles, and salt.
  • In a large bowl, combine the chicken, cucumber, and red onion. Reserve 1/4 cup of the dressing and toss the rest into the chicken salad.
  • Divide the spinach equally among four plates and top each with the chicken salad. Drizzle each salad with 1 tablespoon of the reserved dressing.

Tips:

  • For the best flavor, use fresh, tender spinach. If you can't find baby spinach, you can use regular spinach, but be sure to remove the tough stems.
  • To make the spicy honey dressing, you can adjust the amount of cayenne pepper to taste. If you don't like spicy food, you can omit it altogether.
  • If you don't have any honey on hand, you can substitute maple syrup or agave nectar.
  • To save time, you can use pre-cooked bacon. Just be sure to crisp it up in a skillet before adding it to the salad.
  • You can also add other toppings to this salad, such as crumbled blue cheese, chopped walnuts, or dried cranberries.

Conclusion:

This spinach salad with spicy honey dressing is a delicious and healthy side dish or main course. It's packed with fresh spinach, crispy bacon, and sweet and spicy dressing. The best part is that it's easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy salad recipe, give this one a try!
