1 cup shredded mozzarella cheese
3 cloves garlic, minced, divided
kosher salt, to taste
freshly ground pepper, to taste
4 large boneless, skinless chicken thighs
8 slices prosciutto
1 red bell pepper
2 tablespoons olive oil, plus more for drizzling
8 oz dried fettuccine noodles
2 tablespoons lemon juice
1 ½ cups chicken broth
6 tablespoons unsalted butter
fresh italian parsley, for garnish, chopped

Steps:

  • In a medium bowl, mix together the spinach, mozzarella, and 1 clove minced garlic. Season with salt and pepper. Set aside.
  • Place a chicken thigh between 2 sheets of plastic wrap and pound with a meat mallet, rolling pin, or heavy pan until about ¼ inch (6 mm) thick. Season on both sides with salt and pepper and repeat with remaining thighs.
  • On a clean sheet of plastic wrap, lay 2 slices of prosciutto vertically, overlapping slightly. Lay a chicken thigh on top. Spread a quarter of the spinach filling evenly over the chicken.   • Whisk in the cold butter, 1 tablespoon at a time, until the sauce is emulsified. Season with salt and pepper to taste.
  • Add the cooked fettuccine to the sauce and toss to coat, adding some of the reserved pasta water as needed to loosen the sauce.
  • Thinly slice the chicken rolls.

2 tablespoons olive oil
2 cloves garlic, chopped
½ onion, chopped
4 ounces chopped cooked ham
4 ounces fresh spinach
4 ounces cream cheese

4 ounces Italian-style salad dressing
8 toothpicks, or as needed
½ sleeve round buttery crackers, crushed fine
4 ounces shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a baking pan with cooking spray.

6 boneless skinless chicken breasts
1 (12 ounce) can of fiesta cheddar cheese soup
4 cups of fresh Baby Spinach
4 cups of shredded mozzarella cheese
2 cups of shredded parmesan cheese

1 teaspoon garlic powder
1 teaspoon onion powder
1 cup heavy whipping cream
1/2 cup milk

Steps:

  • Preheat oven to 350 degrees.
  • In a mixing bowl, combine Fiesta cheddar soup, half of whipping cream, and milk. After completely mixed, finish adding the rest of the whipping cream, and use half of mixture on the bottom of casserole dish.

1 pound fresh spinach or a 10-ounce package of frozen
2 tablespoons butter
2 tablespoons finely minced shallots
1 clove garlic, minced
1/2 teaspoon dried sage
2 tablespoons walnuts
2 tablespoons freshly grated Italian Parmesan cheese
Salt and freshly ground pepper
8 small boned and skinned chicken breasts, about 2 1/2 ounces each, pounded thin
4 tablespoons flour
2 tablespoons olive oil
1 cup dry red wine
2 tablespoons balsamic vinegar

Steps:

  • Trim the spinach of any coarse stems, wash it very well and chop it. If using frozen spinach, defrost it. Heat butter in a large skillet. Add one tablespoons of the shallots and the garlic and saute over medium low heat until tender.
