Time 1h20m

Yield 1 meatloaf, 6-8 serving(s)

Number Of Ingredients 11

1 1/2 lbs lean hamburger
1/2 cup old-fashioned oatmeal, can sub dried bread crumbs
1/4 cup milk
1/4 cup finely chopped onion
1 teaspoon seasoning salt
1 teaspoon Worcestershire sauce
1 egg
4 -6 slices deli ham (thin slices)
1 (10 ounce) package frozen chopped broccoli, thawed and drained
10 slices American cheese, can sub cheddar or 10 slices colby-monterey jack cheese, divided
pepper

Steps:

  • In large bowl combine first 7 ingredients til very well mixed.
  • Place mixture onto a sheet of foil.
  • Press out to a flat, even 8"x10" rectangle.
  • Top evenly with 6 slices ham to within 1/2" of edges.
  • Top with 6 slices american cheese.
  • Sprinkle cheese layer with chopped broccoli evenly. Chop any big pieces smaller.
  • Roll up starting from long side, lifting and using the foil to help you roll it all up.
  • Roll up tightly.
  • Pinch ends and seam closed VERY well. Place seam side down onto cookie sheet, or keep on the foil (seam side down)and place onto cookie sheet, that's what I did. Easier clean up!
  • Sprinkle with a little coarse ground pepper.
  • Bake in 350º oven for 55 minutes.
  • Cut remaining 4 slices cheese in half corner to corner. Place on top of meatloaf nicely, overlapping slices slightly, showing pointed sides.
  • Bake 5 minutes longer or til cheese is just melted.
  • Let rest 15-20 minutes before slicing.
  • Good served with mashed potatoes, baby carrots and fresh rolls.
  • *Some hams can turn ground beef slightly pink. It is done in 1 hour. Just check juices to see if they are running clear.
  • **"Do-ahead" Tip:This can be rolled up and refrigerated (covered)for up to 24 hours before baking.

SPIRAL MEATLOAF

Spiral Meatloaf image

Can you stand another meatloaf recipe? I saw this being made on a tv show -- but was vacuuming and didn't catch all the ingredients. So, I adapted my own (rather, my mother's) recipe and came up with this. My husband will not eat meatloaf any other way!

Time 1h10m

Yield 1 loaf, 8 serving(s)

Number Of Ingredients 14

1 lb ground chuck
1/2 lb ground pork
1/2 lb ground turkey
1 envelope lipton's onion soup
1/2 cup very hot water
3/4 cup oatmeal
1 egg, beaten
4 tablespoons steak sauce (I use A1)
1 clove garlic, minced
1/4 teaspoon crushed thyme
1/2 teaspoon crushed basil
1 tablespoon flat leaf parsley, chopped (reserve 1 tsp for top of loaf)
1 bag of ready to eat baby spinach leaves
2 cups shredded mozzarella cheese

Steps:

  • Mix the meats, soup mix, water, oatmeal, egg, steak sauce and herbs together in a large bowl.
  • Pat meat mixutre into a rectangle.
  • The meat should be about 1/2 inch thick.
  • Lay the baby spinach leaves over the meat, overlapping them to form a solid layer.
  • Sprinkle all but 1/2 cup of cheese over the spinach.
  • Carefully roll the meat up.
  • This can be a little tricky, but once the first roll is made, it gets easier.
  • Once rolled, pinch the ends to seal and place on a cooking sheet.
  • Sprinkle remaining cheese and reserved parsley on top.
  • Bake at 350 for 45-55 minutes.
  • Let rest for five minutes before slicing.

Tips:

  • Choose the right meat: A combination of ground beef and pork is a classic choice for spiral meatloaf, but you can also use ground turkey, lamb, or even venison. Just make sure the meat is fresh and has a good fat content, as this will help keep the meatloaf moist.
  • Use a variety of seasonings: Don't be afraid to experiment with different herbs and spices to flavor your meatloaf. Some popular options include garlic, onion, paprika, chili powder, and thyme.
  • Don't overmix the meat: Overmixing the meat can make the meatloaf tough. Just mix the ingredients until they are combined.
  • Shape the meatloaf properly: To get a nice spiral effect, you need to shape the meatloaf into a long, thin loaf. You can use a loaf pan or a piece of parchment paper to help you shape the meatloaf.
  • Cook the meatloaf at the right temperature: Spiral meatloaf should be cooked at a moderate temperature (350 degrees Fahrenheit) for about an hour, or until the internal temperature reaches 160 degrees Fahrenheit.
  • Let the meatloaf rest before slicing: Once the meatloaf is cooked, let it rest for a few minutes before slicing. This will help the juices redistribute throughout the meatloaf and make it easier to slice.

Conclusion:

Spiral meatloaf is a delicious and impressive dish that is perfect for any occasion. By following these tips, you can make a spiral meatloaf that is sure to wow your family and friends.

Whether you're a seasoned cook or a beginner, spiral meatloaf is a great recipe to try. It's a fun and unique way to serve meatloaf, and it's sure to be a hit with your family and friends.
