Creamy split pea soup with potatoes and sausages - a comfort soup for the cold weather season.

Provided by thepaprikamonkey

Categories     Main Course

Number Of Ingredients 13

1/2 lb Bacon
2 cups splitpeas
1 leek, sliced
1 medium turnip diced
1 medium onion chopped
1 medium carrot diced
1 medium parsnip diced
1 piece Rind of parmesan cheese if available
8 cups chicken or vegetable or beef broth
3 small potatoes diced in small pieces
4 flavorful hot dogs
1/2 lemon squeezed
1 tsp sugar

Steps:

  • Chop up the bacon and fry for a few minutes in a large heavy bottom pot. Don't let it get too dark.
  • Then add all the chopped vegetables (the turnip, parsnip, carrot, leek and onion) and season with 1/2 teaspoon salt and 1/2 teaspoon pepper. Mix it well with the bacon pieces and rendered fat and let it cook down for 5 min.
  • Add the washed split peas and let them saute with all the veggies
  • Add the broth and a piece of cheese rind - I prefer Parmesan. Then let it come to a boil and simmer on low flame for at least 3 hours.
  • When the split peas are almost soft add the potatoes and sliced hot dogs and cook for another 1/2 hour until potatoes are tender. At the end just squeeze half a lemon over the hot soup and add 1 teaspoon of sugar.
  • Serve the soup with a hunk of krusty country bread and butter.

SPLIT PEA SOUP WITH CRISPY KIELBASA

Split Pea Soup with Crispy Kielbasa image

One of my all-time favorite comfort foods is a bowl of split pea soup, dating back to the days when my mother served us canned pea soup with cut-up hot dogs (very '50s!). Now I prefer a big pot of homemade soup to serve with sautéed kielbasa on top. I love the way the earthy, creamy soup contrasts with the crispy, spicy sausage.

Provided by Ina Garten

Time 1h45m

Yield 6 servings

Number Of Ingredients 13

Good olive oil
2 cups chopped leeks, white and light green parts, spun-dried (2 leeks)
1 1/2 cups chopped yellow onion (1 large)
2 cups (1/2-inch) diced, scrubbed carrots (3 large)
1 tablespoon minced garlic (3 cloves)
1 pound dry green split peas
8 cups good chicken stock, preferably homemade
1 smoked ham hock
8 fresh thyme sprigs, tied with kitchen twine
2 large fresh bay leaves
Kosher salt and freshly ground black pepper
12 ounces smoked kielbasa, halved lengthwise and sliced diagonally in 1/4-inch-thick pieces
Minced fresh parsley, for serving

Steps:

  • Heat 1/4 cup olive oil in a large (11 to 12-inch) pot or Dutch oven, such as Le Creuset, over medium-high heat. Add the leeks, onion, and carrots and cook for 7 to 8 minutes, stirring occasionally, until tender and starting to brown. Stir in the garlic and cook for one minute. Stir in the peas to coat with oil and cook for one minute. Add 8 cups of the chicken stock, 2 cups water, the ham hock, thyme bundle, bay leaves, 2 teaspoons salt, and 1 teaspoon pepper. Bring to a boil, lower the heat, and simmer, partially covered, for 1 1/4 hours, stirring occasionally, until the peas are very tender and falling apart. After 45 minutes, stir more frequently, scraping the bottom of the pot to be sure the soup doesn't burn.
  • Discard the thyme bundle, bay leaves, and ham hock. Transfer 2 cups of the soup to the bowl of a food processor fitted with the steel blade and purée. Return the purée to the pot, adding more chicken stock or water if the soup is too thick.
  • To serve, heat 2 tablespoons olive oil in a medium (10 to 11-inch) sauté pan over medium heat. Add the kielbasa and sauté for 5 to 6 minutes, tossing occasionally, until the kielbasa is browned. Serve the soup hot with the kielbasa and parsley sprinkled on top.
  • Make ahead: Reheat the soup over low heat, adding chicken stock or water to thin.

Split pea soup is a hearty and flavorful soup traditionally made with dried split peas, vegetables, and meat or sausage. This recipe incorporates the classic ingredients along with a few additional tips and tricks to elevate the flavor and texture of the soup.

Tips:

  • Soak the split peas: Soaking the split peas before cooking helps to reduce cooking time and results in a more tender texture. You can soak the peas in cold water for at least 2 hours or overnight in the refrigerator.
  • Use a variety of vegetables: The combination of vegetables in this recipe provides a well-rounded flavor profile. Feel free to experiment with different vegetables, such as carrots, celery, parsnips, or turnips.
  • Sauté the vegetables: Sautéing the vegetables before adding them to the soup enhances their flavor and adds depth to the broth. Make sure to cook the vegetables until they are slightly caramelized.
  • Use a flavorful sausage: The type of sausage you use can greatly impact the flavor of the soup. Choose a sausage with a strong flavor, such as kielbasa or andouille.
  • Add herbs and spices: Herbs and spices play a key role in adding complexity to the soup. Use a combination of dried or fresh herbs, such as thyme, rosemary, and bay leaves. You can also add a pinch of red pepper flakes for a touch of heat.
  • Don't overcook the soup: Overcooked split pea soup can become mushy and lose its flavor. Aim to cook the soup until the split peas are tender but still hold their shape.

Conclusion:

This split pea soup with sausage and potato is a delicious and satisfying meal that is perfect for a cold winter day. By following the tips and tricks outlined above, you can create a flavorful and hearty soup that will warm you from the inside out. Serve the soup with a side of crusty bread or crackers for a complete and comforting meal.
