1 pound russet potatoes, peeled and quartered
2 packages (1/4 ounce each) active dry yeast
1-1/2 cups warm milk (110° to 115°)
1/2 cup canola oil
1/2 cup sugar
2 eggs
1 teaspoon salt
7-1/2 cups all-purpose flour
Additional oil for deep-fat frying
4 cups confectioners' sugar
1/3 cup water
1 teaspoon vanilla extract

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain, reserving 1/2 cup cooking liquid; cool to 110°-115°. Discard remaining cooking liquid. Mash potatoes without milk or butter. , In a large bowl, dissolve yeast in reserved cooking liquid. Add the mashed potatoes, milk, oil, sugar, eggs and salt. Add enough flour to form a soft dough. Place in a greased bowl, turning once to grease top. , Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down; let rise again until doubled, about 20 minutes. Roll out on a floured surface to 1/2-in. thickness. Cut with a floured 3-in. doughnut cutter. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry doughnuts, a few at a time, until golden brown. , For glaze, in a large bowl, combine the confectioners' sugar, water and vanilla until smooth. Dip warm doughnuts in glaze. Cool on wire racks.

4 boiling potatoes, peeled and chopped
3 cups milk
1 cup white sugar
1 cup shortening
1 teaspoon salt
6 cups all-purpose flour
1 tablespoon grated lemon zest
3 tablespoons lemon juice
1 cup warm water (110 degrees F/45 degrees C)
4 ½ teaspoons active dry yeast
6 eggs
½ teaspoon ground nutmeg

Steps:

  • In a small saucepan, cover peeled potatoes with water. Bring water to a boil and cook until tender, about 15 minutes. Let cool and mash.
  • Scald the milk and add the sugar, shortening, 2 cups mashed potatoes and salt. Mix well.
  • In an upright mixer with a dough hook attachment. Add the potato mixture, flour, lemon juice, lemon zest, water, yeast eggs and nutmeg. Mix until well mixed, dough will be a bit sticky. Cover and let rise until doubled in size.
  • Roll dough out on a lightly floured surface and cut with a doughnut cutter. Place the cut doughnuts on a greased baking sheet, cover and let rise until doubled in size.
  • In a hot fryer or deep fry pan heat shortening or canola oil to 375 degrees F (190 degrees C). Carefully place 2 to 3 doughnuts in pan. Turn when lightly golden. Lift out when done and drain on paper towels. Glaze or roll in sugar.

Nothing beats a fresh doughnut! This thrifty recipe comes from the New England chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Chilling time not included in preparation time.

Number Of Ingredients 10

5 cups flour
7 teaspoons baking powder
1 teaspoon salt
1 1/2 cups mashed potatoes
3 eggs, well beaten
2 cups granulated sugar
1 1/2 tablespoons butter, melted
1 teaspoon grated nutmeg
1 cup milk
oil, for frying

Steps:

  • Sift first three ingredients together.
  • Beat potatoes, eggs, sugar, melted butter together; add nutmeg and milk and stir.
  • Add sifted ingredients and stir until just blended; chill.
  • Preheat the oil to 375F in a large saucepan or stockpot.
  • Place about 1/3 of the dough at a time on a lightly floured board, sprinkle surface lightly with flour and roll to 3/8" thickness (the dough should be just stiff enough to handle; the softer the dough, the more tender the doughnut).
  • Cut with a doughnut cutter dipped in flour.
  • Fry until golden brown.
  • Drain on paper towels for a few seconds; roll in granulated or confectioners' sugar, if desired.

2 cups milk (I use 1¾)
½ cup sugar
½ cup shortening
2 teaspoon salt
1 package yeast
1 cup mashed potatoes
2 eggs
6 cups flour (approximately - dough should be sticky)

Steps:

  • Scald milk with shortening in it; cool. Soften yeast in ¼ cup water. Mix all ingredients - adding 2 cups of the flour and the potatoes last.- to make a sticky dough. Add remaining flour until you have a soft dough that you can handle. Cover and let rise in a warm place for about an hour. Roll out dough, cut into doughnuts. Let rise again for about 30 min. Deep fry at 360 degrees until golden brown. Drain on paper towels. Dip in sugar or glaze. Creamy Glaze: 1/3 cup butter 2 cups powdered sugar 1½ teaspoons vanilla 4 to 6 tablespoons water Melt butter or margarine in saucepan. Blend in powdered sugar, vanilla. Stir in water, 1 tablespoon at a time, until glaze is proper consistency. Makes enough for 12 doughnuts. Chocolate Glaze: 4 oz. semi-sweet chocolate 1/3 cup butter 2 cups powdered sugar 1½ teaspoons vanilla 4 to 6 tablespoons water Melt chocolate and butter, stir in powdered sugar and vanilla. Mix in water, 1 tablespoon at a time until glaze is of proper consistency. Makes enough for 12 doughnuts. Thin Glaze: 3 cups powdered sugar. Stir in water a little at a time until it's pretty runny. Dip Spudnuts in glaze while still hot.

This is a simple and easy recipe for raised doughnuts. You will love making these delicious doughnuts using yeast and freshly boiled potatoes.( mashed without butter,seasoning or milk-just the smashed potatoes). Great glazed or with cinnamon sugar. Aunt Martha made these many times, now I have this recipe from the 40's.

1 lb russet potatoes, peeled and quartered(about 2 c. mashed)
2 pkg active dry yeast
1 1/2 c warm milk can use buttermilk or sour milk if desired
1/2 c crisco vegetable oil
3/4 c granulated sugar more or less
2 large eggs or 3 medium
1/2 tsp salt
7 1/2 c (about) all purpose flour- more or less
oil for deep frying

Steps:

  • 1. Cook potatoes in a saucepan and cover with water. Bring to a boil; cook until tender. Drain, reserving 1/2 cup potato water; cool to lukewarm. (save remaining water for other dishes- freeze it to use with soup of vegetables).
  • 2. Dissolve yeast in the 1/2 cup potato water;stir until dissolved. In a large mixing bowl;Mash potatoes when cooled to lukewarm and add to yeast mixture. Stir in milk, oil, sugar, eggs and salt. Add enough flour to form a soft dough. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down; let rise again until doubled, about 20 minutes. Roll out on a floured surface to 1/2 inch thickness. Cut with a floured 3 inch doughnut cutter.
  • 3. In a deep fryer(I use my electric fry pan), heat oil to 375^. fry doughnuts, a few at a time, until golden brown on each side. For a glaze: 4 c. powdered sugar 1/3 c. water 1 teas. vanilla Combine ingredients in a bowl and dip warm doughnuts in glaze. Cool on wire racks. --- OR---- Place granulated sugar about 1/2 cup and 2 Tablespoons cinnamon in a seal-able bag and place luke-warm doughnuts in bag -one or 2 at a time and shake gently to coat evenly.

1 3/4 cups milk
1/2 cup shortening
1/2 cup sugar
1/2 cup potatoes, mashed with no butter or 1/2 cup salt
1 (1/4 ounce) package yeast
1/2 cup warm water
2 eggs
3/4 teaspoon vanilla
6 1/2 cups flour
1 teaspoon baking powder
2 teaspoons salt

Steps:

  • Scald milk, add shortening, sugar, and mashed potatoes. Cool to lukewarm. Mix yeast and warm water. Let stand 10 minutes. Add milk, shortening, sugar, and mashed potatoes. Stir. Stir in eggs and vanilla. Sift togrther the flour, baking powder, salt, and add to other ingredients and mix. Add 1/2 cup more flour if needed. Dough should be soft and sticky. Put in greased bowl and turn to coat. Let rise for 1 1/2 hours. Roll out on floured board to 1/2 inch thickness. Cut with donut cutter. Let rise 1/2 hour or more. Drop in hot grease until golden brown. Glaze with powdered sugar mixed with boiling water and vanilla. Dip right after frying and let dry.
