Cranberry Bliss Bars - a homemade version of the popular Starbucks treat! These taste just like the original, and are easy to make right at home!

1 cup (2 sticks) butter, melted
1 1/2 cups packed brown sugar
2 eggs
1 teaspoon orange extract
1 teaspoon vanilla extract
1/2 teaspoon ground ginger
1 teaspoon baking powder
1/2 teaspoon salt
2 cups all purpose flour
1 cup white chocolate chips
3/4 cup Craisins
8 oz. cream cheese, (softened)
1 1/2 cups powdered sugar
1/2 teaspoon orange extract
1/2 teaspoon vanilla extract
1/3 cup Craisins, (roughly chopped)
2 squares baking chocolate or almond bark, (melted)

Steps:

  • Preheat oven to 350 degrees F. Line a 15x10 or 13x9 inch jelly roll pan or rimmed cookie sheet with parchment paper. *see notes
  • Beat together melted butter and brown sugar over medium speed with an electric mixer. Add in eggs, 1 tsp orange extract, and 1 tsp vanilla extract and beat until mixed well. Add in ground ginger, baking powder, salt, and flour, beating until just blended. Don't overmix.
  • Stir in white chocolate chips and Craisins by hand. Spread evenly into the bottom of prepared pan. Bake in preheated oven for 18-22 minutes until set and golden brown at the edges. Don't overbake or bars will be hard. Remove from oven and place pan on a wire rack to cool. Allow bars to cool completely before topping with frosting.
  • To make the frosting, beat cream cheese and powdered sugar together with an electric mixer until smooth and creamy. Add 1/2 tsp orange extract and 1/2 tsp vanilla extract and mix well. Top cooled bars with frosting. Sprinkle with chopped Craisins and drizzle white chocolate over the top with a fork. I dip my fork into the chocolate then shake it gently over the top of the bars to create little streaks. You can either slice right away and enjoy, or place the bars in the refrigerator for about an hour (what I like to do) to help them set up before cutting. Cut into triangles and enjoy!

2 ¼ cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
⅛ teaspoon ground cinnamon
¾ cup salted butter (melted)
1 ½ cups packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
½ cup dried cranberries
1 cup white chocolate chips
8 ounces cream cheese (softened)
1 tablespoon grated orange zest
1 cup powdered sugar (sifted)
1 cup white chocolate chips (melted)
½ cup dried cranberries (roughly chopped)

Steps:

  • Preheat the oven to 350 degrees F. Line a 13x9-inch baking dish with foil, leaving a foil overhang on either side for handles. Spray foil with nonstick spray.
  • In a medium bowl whisk together the flour, baking powder, salt, and cinnamon; set aside.
  • In a large bowl whisk together the butter and sugar and let the mixture cool to room temperature. Then, use an electric mixer to beat in the eggs and vanilla.
  • Add the flour mixture to the butter mixture and mix together until combined and no flour streaks appear.
  • Stir in the cranberries and white chocolate chips (the batter will be thick).
  • Spread the blondie batter into the prepared pan.
  • Bake for 18-21 minutes or until a toothpick inserted near the center comes out clean (do not over-bake). Cool completely on a wire rack, about 2 hours.
  • In a large bowl, use an electric mixer to beat the cream cheese, orange zest, and powdered sugar until well-blended. Gradually add half of the melted white chocolate; beat until blended.

For Valentine's Day, I used a heart-shaped cookie cutter and tinted the icing pink. They were beautiful!

3/4 cup craisins (dried cranberries)
3/4 cup white chocolate chips
3 ounces cream cheese, softened
2 tablespoons butter, softened
3 cups confectioners' sugar
1 teaspoon orange extract (or vanilla)
1/3 cup craisins, chopped
1 -2 tablespoon grated orange rind
1/3 cup white chocolate chips
1/2 teaspoon canola oil

Steps:

  • Preheat the oven to 350 degrees (325 for a glass or dark pan). Prepare a 10x15 by lining it with parchment paper or use a non-stick spray.
  • BARS: With an electric mixer, beat together softened butter and sugars 3-5 minutes until light; gently blend in eggs and orange extract (don't overbeat eggs). Add the flour, baking powder, and ginger and beat briefly. Add the cranberries and chips, stirring just until incorporated.

  • DRIZZLE: Mix white chocolate and oil in a glass measuring cup. Microwave 1 minute; stirring every 15 seconds until melted. Use a fork or whisk to drizzle the white chocolate diagonally across the bars.
  • Allow one hour for the white chocolate to set before cutting. **To make signature Starbuck triangles, cut into 20 large squares (5 cuts by 4 cuts with the knife). Then cut each square in half diagonally to create triangles.

These used to be the only pastry I would buy from them. They are a soft triangle of white chocolate and cranberry cake covered with creamy lemon frosting and dried cranberries. Make sure you don't substitute the crystalized ginger for powdered ginger!

3/4 cup butter, softened
1 1/4 cups light brown sugar, packed
3 eggs
2 tablespoons crystallized ginger, minced
1 1/2 teaspoons vanilla
1/4 teaspoon salt
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
3/4 cup dried cranberries, diced
4 ounces white chocolate, cut into chunks (I like Ghirardelli)
4 ounces cream cheese, softened
3 cups powdered sugar
4 teaspoons lemon juice
1/2 teaspoon pure vanilla extract
1/4 cup dried cranberries, diced
1/2 cup powdered sugar
1 tablespoon milk
2 teaspoons vegetable shortening

Steps:

  • Preheat oven to 350 degrees.
  • Make cake by beating butter and brown sugar with an electric mixer until smooth. Add eggs, vanilla, ginger, and salt and beat well. Gradually mix in flour until smooth. Mix 3/4 cup diced dried cranberries and white chocolate into the batter by hand. Pour batter into a well-greased 9x13-inch baking pan and spread evenly across the pan. Bake for 35 to 40 minutes or until cake is light brown on top. Allow cake to cool.
  • Make frosting by combining softened cream cheese, 3 cups powdered sugar, lemon juice and vanilla extract in a medium bowl with an electric mixer until smooth. When the cake has cooled, spread frosting over the top of cake.
  • Sprinkle1/4 cup of diced cranberries over the frosting on the cake.
  • Whisk together 1/2 cup powdered sugar, 1 tablespoon milk, and shortening. Drizzle icing over cranberries in a sweeping motion or use a pastry bag with a fine tip. Or you could even put the icing in a zip topped bag trim a corner off the bottom and use it as you would the pastry bag.
  • Cover the cake and let it chill for at least two hours, then slice the cake lengthwise (the long way) through the middle. Slice the cake across the width three times making a total of eight rectangular slices. Slice each of those rectangles diagonally creating 16 triangular slices.
