1 cup minced onion (from 1 small)
1/4 teaspoon ground allspice
Kosher salt and freshly ground pepper
12 ounces pizza dough, room temperature
2 ounces feta, room temperature, crumbled (1/2 cup)
4 ounces mild white cheddar, grated (1 1/4 cups)
4 large eggs

Steps:

  • Preheat oven to 500°. Heat oil in a large ovenproof cast-iron skillet over medium-high. Add beef, onion, and allspice; season with salt and pepper. Cook, breaking up meat with a spoon, until browned, 5 to 6 minutes. Transfer to a bowl.
  • Remove skillet from heat; carefully wipe clean. Drizzle skillet with oil. Using your hands, stretch dough into an approximately 12-inch circle; place in skillet, stretching to edges.
  • Sprinkle dough round evenly with feta, cheddar, and meat mixture, leaving a 1/4-inch border. Transfer skillet to oven and bake until cheeses have melted and crust is crisp on bottom, 14 to 16 minutes. Remove skillet from oven. Using the back of a spoon, make 4 small divots in meat mixture and add 1 egg to each. Bake until egg whites are set but yolks are still runny, 7 to 9 minutes more. Let cool in skillet 5 minutes before serving with salad.

6 tablespoons olive oil
1 small onion, thinly sliced
1 green bell pepper, thinly sliced
Kosher salt and freshly ground black pepper
4 cloves garlic, roughly chopped
8 ounces shaved sirloin steak
1 pound pizza dough, rested at room temperature
1/2 cup shredded mozzarella
1/2 cup shredded provolone
Pickled cherry or banana peppers, chopped, for garnish, optional

Steps:

  • Preheat the oven to 450 degrees F.
  • Heat a 12-inch cast-iron skillet over medium-high heat; add 2 tablespoons of the oil. Add the onions, green peppers and some salt and pepper and cook until the onions are browned and the peppers are tender, about 5 minutes. Add the garlic and cook 1 minute more. Remove to a bowl and set aside.
  • Return the skillet to medium-high heat; add 2 tablespoons of oil and the steak. Cook until browned on both sides, about 3 minutes. Remove to a bowl and set aside.
  • Wipe out the skillet and add the remaining 2 tablespoons oil. Place the pizza dough in the skillet and carefully stretch it out until it fills the entire skillet (the skillet will be hot). Add the steak, onion mixture, mozzarella and provolone over the top. Bake until the crust is cooked and the cheese is melted and browned, 15 to 20 minutes.   • Preheat the pizza oven for 15 minutes.
  • Meanwhile, rub the steaks all over with 1 tablespoon of the butter each, then season generously with salt and pepper.

  • Cook to your desired temperature, basting with the melted butter halfway through. For reference, medium rare was about 2 minutes more for us, but it may vary based on your oven's temperature.

10 ounces sirloin steak (1 inch thick)

2 bell peppers (not green), stemmed, seeded, and thinly sliced lengthwise
4 ounces Monterey Jack cheese, shredded (1 cup)
