Time 2h15m

Yield 6 minutes

Number Of Ingredients 12

1 1/4 cups canola oil
2 pounds boneless beef short ribs
Kosher salt and freshly ground pepper
10 cups low-sodium beef broth
1 small onion, finely diced
1 red or green bell pepper, chopped
1 1/2 tablespoons ground cumin
2 tablespoons hot chili powder
1 1/2 tablespoons chopped fresh oregano
3/4 cup all-purpose flour
1 15-ounce can cannellini beans, drained and rinsed
Guacamole, sour cream, taco-blend cheese and fried tortilla strips, for garnish

Steps:

  • Heat 1/4 cup canola oil in a large soup pot or Dutch oven over medium-high heat. Season the short ribs with salt and pepper and sear until golden brown, 3 to 4 minutes per side. Transfer the meat to another large pot (set the first pot aside) and add the broth. Cover and cook until tender, about 1 hour 30 minutes.
  • Meanwhile, heat the remaining 1 cup oil in the reserved pot over medium heat. Add the onion, bell pepper, cumin, chili powder, oregano, flour, 1 tablespoon pepper, and salt to taste. Cook, stirring, until the flour is smooth, 3 to 4 minutes. Remove from the heat and set aside until the meat is done.
  • Transfer the short ribs to a cutting board; cover the broth and set aside. Let the meat cool slightly, then cut into chunks. Place the pot with the vegetables over medium-high heat. Slowly add the warm broth and whisk until smooth. Stir in the chopped short ribs and the beans, bring to a simmer and cook until thickened, about 15 minutes. Ladle into bowls and garnish with guacamole, sour cream, cheese and fried tortilla strips, for a little extra crunch.

FIESTA STEAK CHILI

Fiesta Steak Chili image

This is a basic recipe for non-traditional chili using steak. My wife is allergic to chili powder, so I don't use any in this recipe, but you are welcome to add some if you like. This is a very tame, full-flavor, colorful chili recipe that even the kids will like. There are plenty of other variations that you can use with this basic recipe, please change at will. Things we have tried include adding three or four fresh jalapenos, or adding Tabasco® habanaro sauce, or cilantro, or fresh tomatoes, or using red, yellow, orange, and green peppers, or hamburger instead of a steak or roast. Serve with tortilla chips, cheese and sour cream.

1 red bell pepper, diced

Tips:

  • Use high-quality ingredients for the best flavor. Choose fresh, flavorful vegetables, and high-quality beef. Look for a chuck roast or flank steak that is marbled with fat for the best flavor and texture.
  • Brown the beef in batches to prevent it from steaming. This will help to develop a nice crust on the beef and add flavor to the chili.
  • Use a variety of spices to give the chili a complex flavor. Fajita seasoning is a great starting point, but you can also add chili powder, cumin, oregano, and garlic powder. Be sure to taste the chili as you go and adjust the seasonings to your liking.
  • Let the chili simmer for at least an hour to allow the flavors to meld. The longer you simmer the chili, the better it will taste. If you are short on time, you can simmer the chili for 30 minutes, but it will not be as flavorful.
  • Serve the chili with your favorite toppings. Some popular toppings include sour cream, shredded cheese, diced avocado, chopped cilantro, and crushed tortilla chips.

Conclusion:

This steak chili is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is packed with flavor and can be easily customized to your liking. So next time you are looking for a quick and easy meal, give this steak chili a try. You won't be disappointed!
