CARAMELIZED ONION-STUFFED BAKED POTATO

Caramelized Onion-Stuffed Baked Potato image

Recipe comes courtesy of Cooking Light magazine (March 2005 edition). This is definately a different way to stuff a potato and it is very delicious! Only adjustment I made to the recipe was the cooking process of the end potato. Recipe says to microwave the fully stuffed potato to melt the cheese, but I placed them in the oven for about 5 minutes with the other dish I was preparing and it worked just fine. If you like potatoes, definately give this one a try.

Tips for Making the Best Caramelized Onion Mashed Potatoes

* **Choose the right type of potatoes.** Starchy potatoes like Russets or Yukon Golds are best for mashed potatoes because they break down easily and create a smooth, creamy texture. * **Cook the onions low and slow.** This will allow them to caramelize and develop a deep, rich flavor. * **Don't crowd the onions in the pan.** This will prevent them from caramelizing properly. * **Season the potatoes well.** Salt, pepper, garlic powder, and onion powder are all good choices. * **Garnish the mashed potatoes with fresh herbs or cheese.** This will add a pop of color and flavor.

Conclusion

Caramelized onion mashed potatoes are a delicious and versatile dish that can be served with a variety of entrees. They are perfect for a weeknight meal or a special occasion. With a little planning and effort, you can easily make this dish at home. So what are you waiting for? Give it a try!
