SHOCKINGLY SWEET STEWED TOMATOES

Shockingly Sweet Stewed Tomatoes image

Adapted from Real American Food by Jane and Michael Stern (Alfred Knopf, 1986). Copyright 1986 by Jane and Michael Stern, and found at thesplendidtable.com. I like to serve this sweet/tart side dish with a plain, grilled meat, and a green salad. I personally add less sugar - closer to 1/2 of a cup, but wanted to submit the recipe in its original form.

Tips for Cooking Stewed Tomatoes with Mustard Spices:

  • Select ripe, firm tomatoes: Use tomatoes that are free of blemishes and have a deep red color. This will ensure the best flavor and texture in your stew.
  • Use a variety of spices: The combination of mustard seeds, turmeric, and red chili powder gives this stew its unique flavor. You can adjust the amount of each spice to suit your taste preferences. If you don't have mustard seeds, you can substitute ground mustard.
  • Cook the tomatoes slowly: Simmering the tomatoes over low heat allows the flavors to develop and deepen. This will also help the tomatoes to break down and create a thick, rich sauce.
  • Add a little sweetness: A small amount of sugar or honey can help to balance out the acidity of the tomatoes and add a touch of sweetness to the stew.
  • Serve with your favorite sides: Stewed tomatoes can be served with a variety of sides, such as rice, pasta, or bread. You can also add some cooked vegetables, such as peas or carrots, to the stew for a more hearty meal.

Conclusion:

Stewed tomatoes with mustard spices is a delicious and versatile dish that can be enjoyed in many different ways.
