1 medium red onion, halved and thinly sliced
1 tablespoon, plus 2 teaspoons kosher salt, plus more to taste
6 tablespoons red wine vinegar
3/4 cup mayonnaise
3/4 cup sour cream
1/4 cup plus 2 tablespoons jarred grated horseradish (with liquid)
1/2 teaspoon grated lemon zest
Freshly ground black pepper
Hot sauce
6 Kaiser rolls
12 slices vine-ripened tomatoes
24 ounces freshly sliced rare roast beef
3 loosely packed cups watercress or arugula, or a combination of both

Steps:

  • In a small bowl, mix together the onion and 1 tablespoon of the salt. Set aside for 20 minutes. Rinse the onions with cold running water. Drain and squeeze to remove excess liquid. Combine the onions and the vinegar and marinate at least 30 minutes or up to 24 hours.
  • In a small bowl, mix together the mayonnaise, sour cream, horseradish, zest, and 2 teaspoons salt. Season generously with pepper and hot sauce to taste. Refrigerate the horseradish sauce for at least 30 minutes.
  • Preheat the broiler. Slice the rolls in half lengthwise. Using your hands, shallowly scoop out the inside of each half. Transfer the rolls to a baking sheet and arrange scooped-side up. Toast the rolls under the broiler for about 1 minute. Slather the inside of the rolls with the horseradish sauce. On each of the roll bottoms, layer 2 tomato slices and season with salt and pepper to taste. Top the tomatoes with some of the roast beef overlapped into "ruffles" and season with salt and pepper. 3 pounds beef top round roast
6 cloves garlic, minced
1/2 red onion, finely chopped
Kosher salt and coarsely ground black pepper
2 ancho chiles
1/4 cup canola oil
1 cup mayonnaise
Flatbread, recipe follows
Beef tallow, for toasting flatbread
Caramelized onions, for serving
Sliced Swiss cheese, for serving
4 ounces fresh yeast
1 1/4 ounces sugar
4 pounds bread flour
1/3 cup olive oil, plus more for oiling baking sheets
2 ounces kosher salt

Steps:

  • Preheat the oven to 300 degrees F. Coat the top round with the garlic, onion and liberal amounts of salt and pepper. Rub the seasoning into the meat and place on a roasting rack in a baking pan. Roast until the internal temperature reaches 125 degrees F, about 1 hour. Remove from the oven and set aside to rest for at least 90 minutes before slicing.
  • Put the ancho chiles and oil in a blender and blend on high speed until finely pureed. Strain through a fine-mesh strainer or cheesecloth into a container. Gradually stir chile oil into the mayonnaise until the desired spice level is reached; the mayonnaise should be a bright neon orange.
  • Cut the flatbread into twelve 8-by-9-inch rectangles and toast with beef tallow on a griddle over high heat until light golden brown. Slice each rectangle in half horizontally, then smear the cut-sides with mayonnaise.
  • On baking sheets, make twelve stacks of sliced roast beef, caramelized onions and Swiss cheese. Run under the broiler until the cheese is melted and the meat is warm.
  • Transfer the stacks to the flatbread bottoms and form sandwiches. Slice the sandwiches on a diagonal to plate.
  • Mix together the yeast, sugar and 1 1/2 cups of warm water (just under 110 degrees F) in a large bowl and set aside until tripled in size.
  • Place the yeast mixture into the bowl of a stand mixer fitted with the dough hook and add the flour, oil, salt and 4 cups of tepid water. Mix on low speed until incorporated, then mix on medium speed for 10 minutes. Remove the hook but leave the dough in the mixer bowl. Let rise until doubled in size, about 30 minutes.
  • Preheat the oven to 375 degrees F. Remove the dough from the bowl and divide into 4 pieces. Place each piece on an oiled baking sheet and let rest for 30 minutes. Press the dough out to fill the baking sheets, then let rest for another 20 minutes. Press the dough again to fill out the baking sheets; let rest for 20 more minutes. Press the dough for the third time to fill out the baking sheets; let rest for 5 minutes.
  • Bake for 18 minutes, rotating the baking sheets halfway through.

1 cup ketchup
1 package French onion soup (I use Lipton Recipe Secrets Onion Soup and Dip mix)
4 -5 lbs pot roast
30 -35 small rolls or 15 hamburger buns

  • First, I suppose you can gather the ingredients.
  • Then, put them all into a crockpot- that is it!
  • Cook them in the crockpot for approximately 6 hours covered.
  • Stir every once in awhile.
  • When this is done, the meat will be shredded.

  • If you are using regular hamburger buns, it will serve around 15 people.

2 garlic cloves, minced

1 lb beef round tip steak, 1/8-1/4-inch thick, pound if necessary
1 tablespoon olive oil
2 garlic cloves, crushed
3 tablespoons light soy sauce, divided
1/8 teaspoon pepper
1 medium red onion, cut into thin wedges
2 teaspoons olive oil
1 1/2 cups sliced mushrooms
1/2 cup jarred roasted red pepper, cut into strips
1/4 cup dry red wine
8 slices c- monterey jack cheese or 8 slices cheddar cheese
4 (6 inch) crusty rolls or 4 (6 inch) hoagie rolls

Steps:

  • Stack beef steaks; cut lengthwise in half and then crosswise into 1" strips.
  • Heat 1 Tbl. olive oil in non-stick skillet over med-high heat til hot.
  • Stir-fry beef strips and garlic (1/2 batch at a time), 1-2 minutes or til outside surface is no longer pink.
  • Remove from skillet and season with 2 Tbl. soy sauce and pepper.
  • Reduce heat to medium.

  • Top each with 2 slices cheese.
  • Place on cookie sheet with tops next to bottoms cut side up, and broil just til cheese is melted and inside tops are lightly toasted.
