STICKY GARLIC PORK CHOPS

Sticky Garlic Pork Chops image

This sticky garlic pork chop recipe seems too good to be true. It only takes a few minutes of prep work, requires no tricky techniques, and doesn't call for any hard-to-find ingredients. I served this with some bok choy brown rice.

Time 1h30m

Yield 2

Number Of Ingredients 10

⅓ cup light brown sugar
6 cloves garlic, crushed, or more to taste
¼ cup rice vinegar
2 tablespoons fish sauce
1 tablespoon soy sauce
1 tablespoon ketchup
½ teaspoon freshly ground black pepper
2 teaspoons hot sauce, or to taste
2 (10 ounce) thick-cut bone-in pork chops
1 teaspoon vegetable oil

Steps:

  • Combine brown sugar, garlic, rice vinegar, and fish sauce in a bowl for the marinade. Add a splash of soy sauce and a plop of ketchup. Finish off with black pepper and hot sauce.
  • Pour 1/2 of the marinade into a baking dish and lay pork chops over marinade. Pour the remaining marinade on top and toss pork chops until well coated. Wrap with plastic wrap and marinate in the refrigerator, flipping chops every 30 minutes, 1 to 2 hours.
  • Remove chops to a plate, scraping any excess marinade back into the baking dish.
  • Heat oil in a nonstick skillet over medium heat. Place chops in the hot oil. Cook until outsides are nicely charred and meat springs back when lightly prodded, about 5 minutes per side. Remove chops to a plate to rest.
  • Pour the marinade into the skillet. Raise heat to medium-high. Cook until marinade is reduced and sticky, 3 to 5 minutes. Return pork chops and any accumulated juices to the skillet.
  • Reduce heat to medium-low. Cook pork chops, flipping and basting occasionally, until the centers are slightly pink and sauce is to your desired degree of stickiness, 6 to 8 minutes. An instant-read thermometer inserted into the thickest part of the pork should read about 145 degrees F (63 degrees C).
  • Plate each pork chop and spoon a portion of the sticky garlic sauce on top.

Allow some time to make these sweet, sticky, cola pork slices - they're worth it.

Provided by Jeremy Pang

Categories     Main course

Yield Serves 2

Number Of Ingredients 13

450g/1lb pork belly slices
1 tbsp sunflower or vegetable oil
3 garlic cloves, roughly chopped
1 thumb-sized piece fresh root ginger, roughly chopped
3 spring onions, roughly chopped
salt
fresh coriander and sliced red chillies, to serve
1 tbsp tomato purée
1 tsp English mustard
2 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp runny honey
150ml/5½fl oz cola

Steps:

  • Put the pork belly strips in a saucepan and cover two-thirds of the way up the pan with boiling water. Add a pinch of salt and bring to a simmer. Cook for at least 15 minutes, but ideally 40 minutes, topping up with water when needed. Drain and pat dry on a clean tea towel.
  • To make the cola sauce, mix the ingredients together in a bowl and set aside.
  • To finish cooking the pork, heat the oil in a wok or large frying pan over a medium-heat. Add the pork and fry on one side for about 2 minutes, or until well browned, then flip over and cook on the other side until browned and crisp. (Take care as the fat may spit.)
  • Add the chopped garlic, ginger and spring onions and fry with the pork for 10-20 seconds, stirring and tossing together. Pour over the cola sauce and boil vigorously for 1-2 minutes, turning the pork to coat in the sticky sauce.
  • Serve topped with fresh coriander and sliced chillies with rice or noodles alongside.

Tips:

  • Choose the right pork chops. Look for pork chops that are about 1 inch thick and have a good amount of marbling. This will help ensure that they stay juicy and tender during cooking.
  • Use a flavorful marinade. The marinade is what will give your pork chops their delicious flavor. Be sure to use a marinade that contains a variety of spices and herbs. You can also add some citrus juice or vinegar to help tenderize the meat.
  • Cook the pork chops over medium heat. This will help prevent them from drying out. If you cook them over high heat, they will quickly overcook and become tough.
  • Use a meat thermometer to ensure that the pork chops are cooked through. The internal temperature of the pork chops should be 145 degrees Fahrenheit. If you cook them beyond that, they will become dry and tough.
  • Let the pork chops rest before serving. This will help the juices redistribute throughout the meat, resulting in a more flavorful and tender pork chop.

Conclusion:

Sticky cola pork chops are a delicious and easy-to-make dish that is perfect for a weeknight meal. The pork chops are marinated in a flavorful cola-based marinade and then cooked until they are tender and juicy. The cola marinade gives the pork chops a slightly sweet and tangy flavor that is sure to please everyone at the table. Serve the pork chops with your favorite sides, such as mashed potatoes, green beans, or a salad.
