Tasty sticky chicken wings glazed with Guinness bbq sauce

4 pounds chicken wings
1 tsp garlic powder
1 tsp paprika
½ tsp cayenne
1 tsp dried oregano
1 tsp salt
½ tsp black pepper
1 cup ketchup
¼ cup apple cider vinegar
¾ cup Guinness beer
⅓ cup brown sugar
1 tbsp soy sauce

Steps:

  • Make sure the wings are separated into wing and small drumettes. You can do this by splitting the wing in the middle with a sharp knife.
  • Preheat the oven to 400°F and line a 13x9 baking pan with foil and then lay a wire rack on top of the foil.
  • Place the wings in even rows on to the wire.
  • In a small bowl combine the garlic, paprika, cayenne, oregano, salt and pepper.
  • Sprinkle each side of the wings generously with the seasoning.
  • Place the wings into the oven and bake for 30 minutes.
  • After 30 minutes turn the wings over and bake for another 30 minutes.
  • While the wings are cooking, combine the sauce ingredients in a small pot and stir well.
  • Bring to a simmer and then turn the heat to low and slowly simmer the sauce, stirring often.
  • After the wings ahve cooked for an hour, brush them with the sauce. Bake for another 5 minutes.
  • Flip the wings and repeat with more sauce and bake for another 3-4 minutes.
  • Brush with more sauce before serving.

1 cup Guinness
¼ cup each: ketchup and honey
2 tablespoons balsamic
2 teaspoons Dijon mustard
2 cloves garlic (minced)
1 teaspoon oil
8 boneless skinless chicken thighs

Steps:

  • Add the Guinness, ketchup, honey, balsamic, Dijon, and garlic to a small pot and bring to a boil over high heat. Reduce the heat and simmer for 15 minutes, or until it starts to thicken.
  • While the sauce is simmering, start the chicken. Heat the oil in a large frying pan over medium-high heat. Add the chicken to the pan and brown it on both sides, about 10 minutes total. Drain the fat from the pan.
  • Pour the slightly thickened Guinness sauce over the chicken and continue to cook the chicken, uncovered, turning it over a few times so the sauce coats both sides, for about 15-20 minutes, or until the sauce reduces and is thick and sticky.

2 pounds chicken wings, split and tips discarded
1 tablespoon toasted sesame oil
1 tablespoon soy sauce
1 tablespoon lime juice, from 1 lime
3 tablespoons clover honey
1 tablespoon Korean chili paste
1 tablespoon soy sauce
2 teaspoons sesame oil
2 teaspoons lime juice
1 clove garlic, peeled and smashed

Steps:

  • For the wings: Place the wings in a resealable plastic bag. To the wings, add the sesame oil, soy sauce and lime juice. Seal the bag and mix the wings around to coat in the marinade. Place in the refrigerator and marinate for 3 hours.
  • Preheat the oven to 425 degrees F.
  • Spread the wings on a rimmed baking sheet and bake for 20 minutes.
  • For the sauce: While the wings are baking, combine the honey, chili paste, soy sauce, sesame oil, lime juice and garlic in a small saucepan over medium heat. Whisk until smooth. Bring to a simmer. Reduce heat to low and cook until the mixture has thickened, about 5 minutes.
  • Remove the wings from the oven and brush with the sauce. Using a metal spatula, toss to coat well. Return the tray to the oven and cook an additional 5 to 10 minutes or until glazed and cooked through. Toss the cooked wings to coat well and serve.

3-1/2 to 4 pounds whole chicken wings
1 cup packed brown sugar
3/4 cup soy sauce
1/2 cup teriyaki sauce
1/2 cup butter, melted
1 tablespoon Creole seasoning
1 teaspoon ground mustard

Steps:

  • Cut chicken wings into three sections; discard wing tips. In a large bowl, combine the brown sugar, soy sauce, teriyaki sauce, butter, Creole seasoning and mustard; add chicken and turn to coat; cover and refrigerate for 8 hours or overnight., Drain and discard marinade. This is based on my grandmother's recipe for Pot Roasted Chicken, a sort of fusion dish. It has a definite bite from the pepper and Guinness and is not for the fainthearted *wink* If you prefer something gentler, use half Guiness and half water. The original dish is a mixture of Asian and Western ingredients and cooking methods. This is my lazy version, which was inspired by Buffalo Chicken Wings. It's good with white or buttered rice or pasta or as finger food when you're having drinks.

1 kg chicken wings, trim off tip and cut through each wing at the joint
10 shallots, peeled and pounded to a fine paste in a pestle and mortar
2 tablespoons black peppercorns, finely crushed
4 tablespoons dark soya sauce (not the sweet variety)
1 tablespoon light soya sauce
4 teaspoons sugar
320 ml Guinness stout

Steps:

  • Combine everything except for Guinness in a large bowl and mix well. Leave to marinate about 15 minutes. Drain off marinade and reserve.
  • Heat 4 tbs oil in a wok or deep pan till smoking hot. Add chicken and stir over high heat till browned. Pour in reserved marinade and continue stirring till sticky. Keep heat high.
  • Pour in Guinness and bring to the boil. Lower heat and simmer till liquid evaporates and chicken is cooked through and coated with thick and sticky gravy, but not falling off bones. Stir, scraping bottom and sides often to prevent sticking and scorching.
  • Serve on it's own or with rice, pasta or mashed potato.

4 pounds chicken wings or drumettes
1/2 cup soy sauce
1/2 cup fresh lime juice
1/4 cup canola oil
1/4 cup honey
2 tablespoons grated fresh ginger
1/2 teaspoon crushed red pepper flakes
4 cloves garlic, minced
1 small onion, chopped

Steps:

  • Put the chicken in a large resealable bag. Combine the soy sauce, lime juice, canola oil, honey, ginger, pepper flakes, garlic and onions in a large bowl and whisk to blend. Pour the marinade into the resealable bag and massage it into the chicken. Place in the refrigerator to marinate for at least 1 hour but not more than 2 hours total.
  • Heat a grill to medium heat.
  • Remove the chicken from the marinade, place on a baking sheet lined with paper towels and pat the chicken dry. Pour the marinade into a small pot and reduce by half over medium-low heat, about 10 minutes. Set aside to brush on the chicken when grilling.
  • Grill the chicken until the skin gets crispy, about 6 minutes. Flip, brush the cooked side with the reduced marinade and cook for another 6 minutes. Flip and brush again with the reduced marinade. Cook each side until nicely browned and slightly sticky, an additional 2 to 3 minutes per side. Transfer to a serving platter and serve.

  • Combine honey, vinegar, paprika, salt and pepper in a small bowl., Cut through the 2 wing joints with a sharp knife, discarding wing tips.
