600g pork fillet
1 tbsp olive oil
2 eating apples , cored and cut into eighths
1 garlic , crushed
2 tbsp maple syrup
1 tbsp white or red wine vinegar
2 tbsp wholegrain mustard

Steps:

  • Cut the pork into 3cm thick slices. Heat the oil in a large, non-stick frying pan, add the pork, then fry on both sides until lightly browned, about 5 mins in total. Lift out of pan and set aside. Add apples to the pan, then cook for 3-4 mins until starting to soften.
  • Stir in the garlic, maple syrup, vinegar and 3 tbsp water, bring to the boil, then return the meat to the pan along with any juices. Simmer for a few more mins, stirring until the pork is cooked through and the sauce is thick and sticky. Stir in the wholegrain mustard, then serve with plain or Crispy onion rice (recipe below).

500 g ground lean pork
2 tablespoons finely chopped roasted peanuts
6 spring onions, finely chopped
2 1/2 cm piece fresh ginger, finely grated
1 grated lemon, zest of
60 ml soy sauce or 1/4 cup soy sauce
1 tablespoon maple syrup or 1 tablespoon honey
1 pinch dried chili pepper flakes
2 tablespoons finely chopped fresh coriander, leaf
1 tablespoon sunflower oil
4 ciabatta rolls, split and toasted
sweet chili sauce, sour cream, shredded lettuce, sliced radish, mustard cress (optional)

Steps:

  • Place the pork,peanuts,onions,ginger,zest,1 tbsp soy sauce,2 tsp maple syrup,chilli flakes and coriander into a large bowl,season well with salt and pepper,then mix well using your hands.Shape into 4 patties,cover and chill for at least 30 minutes.
  • Preheat the oven to 200 degrees and line a tray with baking powder.
  • Heat a frypan/chargrill pan over med-high heat.Brush the pan with a little oil and cook the patties for 1-2 mins each side until golden browm.Transfer the patties to the baking tray and bake for a further 8-10 mins,until cooked through.
  • Mix the oil with the remaining soy and maple syrup or honey in a small bowl and brush over the patties.
  • To serve sandwich each ciabatta with some chilli sauce,sour cream etc and a pattie.

8 ounces pork sausage (preferably hot breakfast sausage)
1/2 cup diced green bell pepper
2/3 cup bottled barbecue sauce
1 1/2 tablespoons pure maple syrup
1 1/2 tablespoons apple cider vinegar
2 onion rolls, split
1/2 cup purchased coleslaw

Steps:

  • Gently mix sausage and green bell pepper in medium bowl. Form into two 1/2-inch-thick patties. (Can be made 8 hours ahead. Cover and refrigerate.)
  • Prepare barbecue (medium-high heat). Whisk barbecue sauce, maple syrup, and vinegar in medium bowl to blend well. Reserve 1/3 cup sauce to baste patties.
  • Grill rolls until lightly toasted. Transfer to 2 plates. Grill patties 5 minutes. Turn patties over. Brush with sauce. Grill until cooked through, brushing occasionally with sauce, about 5 minutes longer. Place burgers on bottom halves of rolls. Top each burger with 1/4 cup coleslaw and top half of roll.
