1 lime, juice and zest of

Steps:

  • Slice the chicken breasts across into large meallions, then toss with the flour that is well-seasoned with salt and pepper.

1 tsp cornstarch
1 tsp light soy sauce
1 tsp rice cooking wine
1 lb boneless chicken thigh, cut bite sized
3 jalapeno, seeded and chopped
3 spring onions, chopped
2 tbsp chili sauce/paste (may use more/less depending on how spicy you like it and what kind you're using)
1 tbsp soy sauce
1 tbsp cooking oil of choice

Steps:

  • In a zip lock bag or mixing bowl, mix chicken, cornstarch, soy sauce, rice cooking wine. Marinate for 10-15 minutes.
  • Heat olive oil on high heat in a wok or cooking pan. Add diced chicken and stir-fry for about 3 minutes or until no longer pink on outside.
  • Add the chili sauce/paste and 1 tbsp of soy sauce and stir fry together.
  • Add the chopped jalapenos and stir fry together for 3-5 minutes.
  • Add the spring onions and stir fry together. We're adding this last, because we don't need this to cook long, we want them to still be pretty vibrant green when we're done.
  • Cook for another minute or 2 until the center of the chicken is no longer pink.
  • Remove from heat and serve hot!

1/2 red onion
2 medium sized carrots
1 red pepper (or 1/2 red and 1/2 yellow)

4 cloves garlic
1 shallot
3 tablespoons olive oil, divided

1 lime, juiced
1 tablespoon honey, or more to taste
½ cup chicken broth

Steps:

  • Puree jalapeno pepper, garlic, shallot, and 1 tablespoon olive oil, salt, and black pepper in a food processor. Add parsley and thyme; process again to integrate.
  • Rub the jalapeno pepper mixture evenly onto the chicken thighs, place onto a platter and cover with plastic wrap; marinate in refrigerator at least 1 hour, up to 24 hours.

1 teaspoon lime zest
1 tablespoon lime juice
1 jalapeno pepper, seeded and diced
