I'm always looking for ways to make healthier versions of my favorite dishes. I used low-fat cheese and reduced-sodium salsa in my casserole, and it was just as delicious as the original recipe.

I'm a vegetarian, so I omitted the ground beef and added extra beans and vegetables. The casserole was still hearty and flavorful, and my meat-eating friends even enjoyed it.

I love spicy food, so I added some extra chili powder and cayenne pepper to my casserole. It had the perfect amount of heat, and the flavor was incredible. I'll definitely be making this again.
