STIR FRIED MIXED PEPPERS & MUSHROOMS
I looked through 15 pages of Pepper recipes and could not find one even close so will post one. I do this recipe for a Sunday brunch or as a side dish for BBQ's. It is very colorful and tasty. Be sure not to cook the peppers too long, you only want to heat them through so they are still crisp. I often use left over oven fries and then leave out the mushrooms.

Steps:
- In a bowl or measuring cup, mix together the soy sauce, cornstarch, sugar, rice wine vinegar, ginger and crushed red pepper flakes.
- Heat the oil in a large high-sided skillet or wok over high heat. Add the bell peppers and stir until browned, 1 to 2 minutes. Scoot the peppers to the edge of the pan, creating an opening in the center.
- Add the shrimp in a single layer to the center of the pan and cook until just beginning to turn pink, 1 to 2 minutes. Add three-quarters of your scallions (hold back the rest for garnishing at the end) and stir everything together.
- Add the kale and cook until wilted, about 2 minutes. Next, pour in the sauce and allow it to bubble and thicken in the pan while stirring, about 1 minute. The sauce should really cling to the shrimp and vegetables. Remove from the heat.
- Sprinkle everything with the cilantro and mint and stir to combine. Garnish with more red pepper flakes and the remaining scallions before serving.

- Combine soy sauce, sherry, cornstarch, and sugar in medium bowl. Stir in beef and set aside for about 15 minutes. Heat large nonstick skillet or wok over medium-high heat. Add 1 tsp of the oil. Swirl to coat. Add half the beef in a single layer and leave until seared, about 1 minute. Stir fry beef until no longer pink, about 1 minute. Remove. Add 1 tsp oil and repeat with remaining beef. Add remaining 2 tsp oil to pan. Add broccoli, bell pepper, and mushrooms. Stir fry 2 minutes. Make a well in the center and add white part of scallions, ginger, garlic, and pepper flakes. Stir fry with vegetables 1 minute. Add 1/4 cup water and cover pan until broccoli is just done, 3 minutes. If cooking in a wok, use a large lid, setting it right down into the wok, if necessary, to cover and steam vegetables. Return beef to pan and add stir fry sauce. Cook until sauce thickens slightly, 1-2 minutes. Sprinkle with scallion greens and serve.
Tips:
- Mise en Place: Before you start cooking, make sure you have all your ingredients prepped and measured. This will help you stay organized and ensure that your stir-fry cooks evenly.
- Use a hot pan: A hot pan will help to sear the vegetables and prevent them from sticking. Make sure your pan is heated over high heat before adding the oil and ingredients.
- Don't overcrowd the pan: If you overcrowd the pan, the vegetables will not cook evenly. Cook the vegetables in batches if necessary.
- Stir-fry in small batches: Stir-frying in small batches will help to prevent the vegetables from getting soggy. Add the vegetables to the pan in batches and stir-fry for 1-2 minutes, or until they are tender-crisp.
- Use a variety of vegetables: Don't be afraid to experiment with different types of vegetables in your stir-fry. Some good options include broccoli, carrots, snap peas, and bok choy.
- Add protein: If you want to add protein to your stir-fry, you can use tofu, chicken, beef, or shrimp. Cook the protein before adding it to the vegetables.
- Add sauce: Once the vegetables and protein are cooked, you can add a sauce to the stir-fry. There are many different types of sauces that you can use, such as soy sauce, teriyaki sauce, or oyster sauce.
- Serve immediately: Stir-fry is best served immediately after it is cooked. This will ensure that the vegetables are still tender-crisp and the sauce is hot.
Conclusion:
Stir-fry is a quick and easy way to make a healthy and delicious meal. By following these tips, you can make a stir-fry that is packed with flavor and nutrients. So next time you're looking for a quick and easy meal, give stir-fry a try.
