This fast yet tasty colorful vegan dish is a hit with my picky vegetarian friend and non veg husband. I remember making several vegetarian dishes before and this was the one that had no left-overs.

2 tablespoons olive oil
3 green onions, sliced
3 garlic cloves, minced
2 bell peppers, deseeded and diced (the colorful the better)
1 cup champignon mushrooms, sliced
1 tablespoon chinese rice wine
2 -3 tablespoons soy sauce
1 teaspoon sesame oil

Steps:

  • Heat oil til really hot.
  • Stir fry onions (1 minute), then garlic (20 seconds).
  • Then add peppers and mushrooms. Stir-fry until it becomes a bit soft, (about 2 minutes).
  • Add the wine and soy sauce and continue to stir for 2 minutes.
  • When done, remove from heat and add the sesame sauce mixing it all together, and serve.

I looked through 15 pages of Pepper recipes and could not find one even close so will post one. I do this recipe for a Sunday brunch or as a side dish for BBQ's. It is very colorful and tasty. Be sure not to cook the peppers too long, you only want to heat them through so they are still crisp. I often use left over oven fries and then leave out the mushrooms.

1 cup sweet green pepper, seeded,membranes removed and cut in thin strips
1 cup sweet red pepper, prepared the same ad the green pepper
1 cup yellow sweet peppers or 1 cup orange bell pepper, prepared the same as the green peppers
3 jalapeno peppers, seeded,membranes removed and finely chopped (optional)
3 cloves garlic, chopped
1 1/2 cups mushrooms, cleaned & sliced
salt & pepper
1 tablespoon vegetable oil

Steps:

  • Heat veggie oil in a skillet and add the garlic until it is light brown.
  • Add mushrooms, stir fry 2 minutes.
  • Add all your peppers and stir fry for not more than 6 minutes.

1/2 cup low-sodium soy sauce
2 tablespoons cornstarch
2 tablespoons sugar
2 tablespoons rice wine vinegar
1 tablespoon minced fresh ginger
1/2 teaspoon crushed red pepper flakes, plus more for garnish
3 tablespoons peanut oil
1 red bell pepper, seeds removed and cut in thin strips
1 yellow bell pepper, seeds removed and cut in thin strips
1 pound jumbo shrimp, peeled and deveined
5 scallions, cut into 1/2-inch pieces
1 cup packed curly kale, stemmed and hand torn
1 tablespoon chopped fresh cilantro
2 teaspoons chopped fresh mint

Steps:

  • In a bowl or measuring cup, mix together the soy sauce, cornstarch, sugar, rice wine vinegar, ginger and crushed red pepper flakes.
  • Heat the oil in a large high-sided skillet or wok over high heat. Add the bell peppers and stir until browned, 1 to 2 minutes. Scoot the peppers to the edge of the pan, creating an opening in the center.
  • Add the shrimp in a single layer to the center of the pan and cook until just beginning to turn pink, 1 to 2 minutes. Add three-quarters of your scallions (hold back the rest for garnishing at the end) and stir everything together.
  • Add the kale and cook until wilted, about 2 minutes. Next, pour in the sauce and allow it to bubble and thicken in the pan while stirring, about 1 minute. The sauce should really cling to the shrimp and vegetables. Remove from the heat.
  • Sprinkle everything with the cilantro and mint and stir to combine. Garnish with more red pepper flakes and the remaining scallions before serving.

1 T reduced-sodium soy sauce
1 T dry sherry
2 tsp cornstarch
1 tsp sugar
3/4 lb flank steak, halved lengthwise, sliced against the grain 1/4" thick
1 T + 1 tsp canola oil
4 c broccoli florets
1 red bell pepper, sliced in 1/4" strips
6 oz shitake mushrooms, stemmed, caps sliced
3 scallions, chopped (which and green parts separate)
1 T minced fresh ginger
1 T minced fresh garlic
1/8-1/4 tsp crushed red pepper flakes
1 recipe Classic stir-fry sauce
Classic stir-fry sauce
1-1/2 tsp cornstarch
1/2 c reduced sodium chicken broth
2 T oyster sauce
2 T reduced-sodium soy sauce
2 tsp sherry
2 tsp sugar
Whisk cornstarch into chicken broth and then add oyster sauce and soy sauce along with sherry and sugar.

Steps:

  • Combine soy sauce, sherry, cornstarch, and sugar in medium bowl. Stir in beef and set aside for about 15 minutes. Heat large nonstick skillet or wok over medium-high heat. Add 1 tsp of the oil. Swirl to coat. Add half the beef in a single layer and leave until seared, about 1 minute. Stir fry beef until no longer pink, about 1 minute. Remove. Add 1 tsp oil and repeat with remaining beef. Add remaining 2 tsp oil to pan. Add broccoli, bell pepper, and mushrooms. Stir fry 2 minutes. Make a well in the center and add white part of scallions, ginger, garlic, and pepper flakes. Stir fry with vegetables 1 minute. Add 1/4 cup water and cover pan until broccoli is just done, 3 minutes. If cooking in a wok, use a large lid, setting it right down into the wok, if necessary, to cover and steam vegetables. Return beef to pan and add stir fry sauce. Cook until sauce thickens slightly, 1-2 minutes. Sprinkle with scallion greens and serve.
