2 cups uncooked instant rice
1 package (16 ounces) frozen broccoli cuts, thawed
1 medium onion, chopped
1 celery rib, chopped
2 tablespoons minced fresh parsley
1 teaspoon salt
6 boneless skinless chicken breast halves (4 ounces each)
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1-1/4 cups water
3/4 cup process cheese sauce
1/2 cup Italian salad dressing
1/2 cup 2% milk
Fresh red currants, optional

Steps:

  • Place rice in a greased 13x9-in. baking dish. Top with the broccoli, onion, celery, parsley and salt. Arrange chicken over vegetables. , In a large saucepan, combine the soup, water, cheese sauce, salad dressing and milk. Cook and stir until cheese sauce is melted and mixture is smooth. Pour over chicken. , Cover and bake at 375° for 45 minutes. Uncover; bake 10-15 minutes longer or until a thermometer reads 170°. Garnish with red currants if desired.

1 lb ground beef
1 envelope powdered spaghetti sauce
1 1/2 cups shredded mozzarella cheese
1 (8 ounce) can crescent rolls
2 tablespoons melted butter
1/4 cup chopped onion
1/2 cup sour cream
8 ounces tomato sauce
1/2 cup parmesan cheese

Steps:

  • Brown meat and onions, then drain. Stir in spaghetti mix and tomato sauce. Combine cheese and sour cream. Pour hot meat mixture into 9x13" greased baking dish.
  • Spoon cheese mixture over the top. Seperate rolls into two rectangles and place on top.
  • Combine parmesan cheese and butter and crumb evenly over dough.

Also easy to change to your liking by adding other veggies or peppers. Save time by cooking extra chicken ahead of time when making other chicken dishes. Serve with your choice of toppings, like sour cream, guacamole, sliced avocados, sliced black olives, or whatever else you like!

1 pound skinless, boneless chicken breast halves
½ cup water, or as needed
1 large onion, chopped
1 red bell pepper, chopped
1 (15 ounce) can black beans, partially drained
1 (14 ounce) can whole kernel corn, drained
¾ cup picante sauce
1 (4 ounce) can chopped green chiles
2 tablespoons chili powder
1 tablespoon ground cumin
4 (8 inch) flour tortillas
1 (10.75 ounce) can condensed fiesta-style nacho cheese soup
1 (14.5 ounce) can diced tomatoes with green chile peppers
1 cup shredded Mexican cheese blend

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Bring chicken breasts and water to a boil in a large skillet; cook over medium heat until chicken juices run clear and meat is no longer pink inside, about 10 minutes. Transfer chicken breasts to a large plate, reserving pan juices in skillet, and shred chicken with 2 forks.

2 chicken bouillon cubes with 2 cups boiling water (or 1 1/2 cups chicken broth)
2 cups cooked chicken
1 can cream of chicken soup
1 envelope Good Seasons Italian Dressing Mix
1/2 cup shredded cheddar cheese
1/2 cup sour cream

Steps:

  • Prepare rice dinner as directed.
  • In mixing bowl, dissolve bouillon, add rest of ingredients, and place in 9x13 baking dish.
  • Bake at 350°F for 30 minutes covered with foil. Remove foil, bake another 5-10 min. Casserole will set-up as it cools.
