1 (12 ounce) package rotini pasta
2 cups half-and-half cream
½ cup butter
⅔ cup freshly grated Parmesan cheese
½ teaspoon dried basil leaves
½ teaspoon dried oregano
½ teaspoon chopped fresh chives
½ teaspoon chopped fresh parsley
4 skinless, boneless chicken breast halves - cubed
½ green bell pepper, chopped
½ red bell pepper, chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain.
  • Combine half-and-half and butter in a saucepan over medium heat. Boil gently, stirring, until mixture has reduced to 1 1/2 to 1 2/3 cups. Remove pan from heat; whisk in cheese, basil, oregano, chives, and parsley. Cover, and set aside.
  • Saute chicken in a large skillet until lightly browned on both sides. Stir in green and red bell pepper, and cook until vegetables are tender, and chicken is no longer pink in the middle.
  • In a casserole dish, combine the hot cooked pasta, chicken mixture, and sauce. Mix well, and serve immediately.

When I worked outside the home for a couple years a co-worker made this for our lunch one day---I am so glad I got the recipe from her---I love it! *my parents do not like mushroom soup---so when I have made it for them---I use cream of chicken & cream of celery. So just use your 2 favorite cream of soup*

2 boneless chicken breast-cooked
1 can(s) lower sodium chicken broth
1 can(s) cream of mushroom soup
1 can(s) cream of chicken soup
1 box low sodium chicken flavor stovetop

Steps:

  • 1. Boil the 2 chicken breast until cooked---cut into bite size pieces.
  • 2. Preheat oven to 350'.
  • 3. In medium to large pot--bring the broth and both cream of soups to a boil. *I use a whisk to blend them all together.
  • 4. Add chicken and stovetop. Stirring to mix well. Take off heat. Let sit 5 minutes.
  • 5. Pour into a greased (I use non-stick spray) 13x9 in dish.
  • 6. Bake 35-40 minutes.
  • 7. **Optional--- Today when I made this I sprinkled the top with crushed French's Fried Onions. Add this the last 5-10 minutes of cook time so it doesn't get too brown.
