2 cups water
1 cup quinoa, rinsed
6 cups torn fresh spinach (about 5 ounces)
2 cups sliced fresh strawberries
1/2 cup chopped walnuts, toasted
1/2 cup reduced-fat red wine vinaigrette
1/4 cup shredded Dubliner or Parmesan cheese
1/4 teaspoon freshly ground pepper

Steps:

  • In a small saucepan, bring water to a boil. Add quinoa. Reduce heat; simmer, covered, 12-15 minutes or until water is absorbed. Remove from heat; fluff with a fork. Cool slightly., In a large bowl, combine spinach, strawberries, walnuts and quinoa. Drizzle with vinaigrette; toss to coat. Sprinkle with cheese and pepper.

1 cup quinoa
2 cups water
4 teaspoons lemon juice
1 teaspoon olive oil
2 cups baby spinach, or to taste
2 cups walnuts
1 (4 ounce) container feta cheese, crumbled
½ cup thinly sliced strawberries, or to taste

Steps:

  • Place quinoa in a saucepan. Pour 2 cups water over quinoa; bring to a boil. Reduce heat; cover. Simmer until quinoa is tender, 12 to 15 minutes. Drain; cool.
