EASY GROUND BEEF STROGANOFF CASSEROLE RECIPE

Easy Ground Beef Stroganoff Casserole Recipe image

Provided by á-48530

Number Of Ingredients 12

1 pound wide egg noodles
1 pound lean ground beef
1 cup chopped onion
1/2 teaspoon dried thyme
8 ounces button mushrooms, sliced
1 cup beef broth
1 tablespoon tomato paste
8 ounces sour cream
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
2 cups shredded mozzarella cheese
2 tablespoons chopped parsley for garnish, optional

Steps:

  • Preheat the oven to 350 degrees F. Lightly spray a 9 x 13 inch baking dish with cooking spray. Place a large stockpot filled with at 4 quarts water and 1 Tablespoon salt over high heat. When it comes to a rolling boil, cook noodles for the time specified on the package. Drain. While water heats and pasta cooks, place a 10 or 11 inch x 3 inch deep pot over medium high heat. Add the beef and cook until it is no longer pink, breaking up chunks with the back of a spoon. Use a slotted spoon to remove meat, but leave any fat and juices in the pan. Over medium heat, cook the onions and thyme in the same pan about 2 minutes until onion is translucent. Add mushrooms and continue to cook on medium high heat, stirring until liquids have released from the mushrooms and then evaporated, about 5 minutes. Return meat to the pan, add broth and tomato paste and stir over medium heat 2 minutes. Off heat, stir in sour cream and salt and pepper. Add noodles to the pan and stir, then add meat and about half the mozzarella, stirring just to combine. Pour into prepared bake dish and sprinkle with remaining cheese. Cover with a piece of foil which has been sprayed with cooking spray and bake 25 minutes. Remove foil and continue to bake until lightly browned, about 10 more minutes. What Is Beef Stroganoff? Tips:

  • Choose the Right Beef: Opt for flank steak, chuck roast, or sirloin steak for tender and flavorful results.
  • Tenderize the Beef: Use a meat mallet or the back of a knife to tenderize the beef before cooking. This helps break down the tough fibers and ensures a more tender final product.
  • Use a Cast Iron Skillet: A cast iron skillet provides even heat distribution and helps create a delicious browned crust on the beef.
  • Cook the Beef in Batches: If cooking a large batch of beef, cook it in batches to avoid overcrowding the pan and ensure even cooking.
  • Don't Overcook the Beef: Cook the beef until it reaches your desired doneness, but avoid overcooking as this can make it tough and chewy.
  • Use a Good Quality Mushroom: Choose fresh, flavorful mushrooms for the best results. Cremini, shiitake, and oyster mushrooms are all great options.
  • Don't Crowd the Pan: When cooking the mushrooms, avoid overcrowding the pan as this can result in steamed mushrooms rather than browned ones.
  • Use Fresh Herbs: Fresh herbs like parsley, thyme, and rosemary add a burst of flavor to the casserole. Use them sparingly to avoid overpowering the other ingredients.
  • Don't Forget the Cheese: A generous amount of cheese is essential for a rich and creamy casserole. Use a combination of mozzarella and Parmesan for the best results.
