MOM'S LEGENDARY STUFFED HAMBURGERS

Mom's Legendary Stuffed Hamburgers image

These are enormous, stick-to-your-ribs kind of burgers with a surprise in the center. A real family favorite. I like to serve them on a bun topped with sauteed mushrooms and Swiss cheese. Use extra lean or lean ground beef instead of medium because the bacon adds to the fat content of the meat.

Time 35m

Yield 4

Number Of Ingredients 6

1 small onion, chopped
4 slices bacon, chopped
fresh-ground black pepper
2 pounds lean ground beef
1 (1 ounce) envelope dry onion soup mix
4 hamburger buns

Steps:

  • Prepare a grill for medium heat. When hot, lightly oil the grate.
  • Fry the bacon in a skillet over medium heat for about 5 minutes, stirring frequently. Add onions to the pan; cook and stir until bacon is browned, but not crisp and onion is soft. Remove from the pan and drain on a paper towel-lined plate. Season to taste with black pepper.
  • In a large bowl, mix together the ground beef and onion soup mix. Divide into 8 balls and then flatten into thin patties. Place a quarter of the bacon mixture onto each of four patties. Top with the remaining patties and press the edges together to seal.
  • Grill the burgers for about 15 minutes, turning once, until well done. Serve on buns with your favorite condiments.

Provided by Michael Symon : Food Network

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 11

2 tablespoons unsalted butter
1 large yellow onion, sliced
Kosher salt
1 1/2 pounds 90/10 ground beef
8 ounces fresh chorizo
1 cup shredded Monterrey Jack cheese
Olive oil
2 tablespoons mayonnaise
4 potato burger buns
Condiments of your choice
1/2 cup picked cilantro, to serve

Steps:

  • Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • For the caramelized onions: Add the butter, onions and a pinch of salt to a medium saute pan. Place the pan on the indirect heat side of the grill and cook, stirring occasionally until the onions are tender and deeply caramelized, about 1 hour. When ready, remove from the grill and set aside.
  • In a mixing bowl, combine the beef and chorizo. Divide the mixture evenly between 8 deli container lids. Flatten the meat into each lid to create an even disk. Pop the 8 meat disks out of the lids. Add the cheese to the center of 4 of the meat disks, then top with the remaining 4 meat disk and seal the edges.
  • Preheat a large cast-iron pan on the direct heat side of the grill. Season both sides of the burgers with salt and drizzle with olive oil. Place the burgers in the pan and immediately smash them with a spatula. Cook the burgers for about 2 minutes per side. Remove the burgers from the grill. Spread the mayo on the burger buns and toast them the indirect heat side of the grill.
  • To build: To each bun, add some caramelized onions, a burger, the condiments of your choice and cilantro. Serve!

MOLTEN CHEESE-STUFFED BURGERS

Take burgers to the next level by stuffing them with cheddar and mozzarella for a gooey centre, and topping them with a dollop of herby burger sauce

Provided by Esther Clark

Categories     Dinner, Main course, Supper

Time 1h20m

Number Of Ingredients 19

1½ tbsp olive oil
1 onion , very finely chopped
70g smoked pancetta , finely chopped
1 garlic clove , crushed
4 thyme sprigs, leaves picked
500g lean beef mince (no more than 10% fat)
50g fresh breadcrumbs
1 egg yolk
60g mature cheddar , grated
60g grated mozzarella
120g mayonnaise
2½ tsp English mustard
½ small bunch of parsley , finely chopped
½ small bunch of basil
50g baby gherkins , finely chopped
4 seeded burger buns , split
2-3 Little Gem lettuces , leaves separated
2 ripe tomatoes , sliced
crispy fried onions

Steps:

  • Heat the oil in a frying pan over a medium heat and fry the onion with a good pinch of salt for 15 mins until soft and translucent. Add the pancetta and cook for 5 mins more, then add the garlic and thyme, and cook for 2 mins. Remove from the heat and leave to cool for 15 mins.
  • Tip the mince into a large bowl. Massage with your hands for 5 mins to tenderise the meat, then add the cooled onion mix, the breadcrumbs and egg yolk. Season generously. Divide evenly into four, weighing for accuracy, if you like. Mix the cheddar and mozzarella together. Form the beef portions into patties, patting each into a 10cm round. Divide the cheese mixture into four, and, in your hands, form each portion into a firm ball, then press into a roughly 4cm disc. Working one at a time, put a cheese disc into the centre of a beef patty, then bring the meat around the cheese to cover. Lightly pat with the palm of your hand to flatten slightly, then chill, covered, for at least 30 mins or up to 48 hrs.
  • Make the sauce by whizzing the mayonnaise, mustard and herbs together in a small food processor. Stir through the gherkins, then cover and chill until ready to use.
  • Light the barbecue. When the flames have died down, grill the burgers on each side for 4-5 mins until charred (if you don't have a barbecue, see tip, below). Wrap individually in foil and leave on the barbecue for 5-7 mins so the cheese centre melts.
  • Grill the buns, cut-side down, for 1-2 mins until toasted. Spread all the cut sides with the sauce, then fill with the beef patties, lettuce, tomatoes and crispy onions.

Time 20m

Number Of Ingredients 6

1 1/2 pounds ground beef chuck
4 ounces cheddar, cut into 4 slabs
Vegetable oil, for grates
Coarse salt and ground pepper
4 hamburger buns, lightly toasted
Toppings, such as lettuce, tomato, red onion, bread-and-butter pickles, and ketchup

Steps:

  • Divide beef into 4 equal portions, and gently form each into a ball. Insert a piece of cheese in the center of each ball, and flatten into 1-inch-thick patties, pinching beef to enclose cheese. Transfer to a plate; with thumb, make a shallow indentation in center of patties, taking care not to expose cheese.
  • Heat grill to high; lightly oil grates. Just before grilling, season patties with salt and pepper. Place on grill; cover, and cook to desired doneness, 2 to 4 minutes per side for medium-rare. Let burgers rest 3 to 4 minutes; serve on buns with desired toppings.

Tips:

  • Choose high-quality ground beef: Opt for ground chuck or sirloin for a flavorful and juicy burger.
  • Season the beef well: Use a combination of salt, pepper, garlic powder, onion powder, and paprika for a classic burger flavor.
  • Mix in some bread crumbs or oats: This will help bind the beef together and prevent it from becoming dry.
  • Don't overmix the beef: Overmixing can make the burgers tough, so mix just until the ingredients are combined.
  • Form the burgers gently: Use your hands to gently shape the burgers into patties, avoiding compacting them too tightly.
  • Make a well in the center of each patty: This will help prevent the burgers from puffing up in the middle when cooking.
  • Cook the burgers over medium heat: This will help prevent the burgers from burning on the outside while remaining raw on the inside.
  • Flip the burgers only once: Flipping the burgers too often can make them dry and tough.
  • Use a meat thermometer to ensure the burgers are cooked to your desired doneness: The internal temperature should reach 160°F for medium-rare, 165°F for medium, or 170°F for well-done.
  • Let the burgers rest for a few minutes before serving: This will help the juices redistribute throughout the burgers, resulting in a more tender and flavorful bite.

With careful preparation and attention to detail, you can create delicious and juicy stuffed beef burgers that will impress your family and friends. Experiment with different fillings, toppings, and cooking methods to find your perfect burger recipe.
