I can't remember where this recipe originated from, but I do remember that it said it was good with corn on the cob, which is a good way to eat it. Think: cottage evenings, barbecues, a little Jerk chicken...

SAMMY'S STUFFED BELL PEPPERS

Sammy's Stuffed Bell Peppers image

I watched my mom make these when I was a kid. I loved them then and I love them now, and you will too. Goes great with mashed potatoes, corn on the cob, and a salad. I like to cook them on a medium-high heat, about 350 degrees, so that the peppers cook soft. You can adjust your temperature to lower the cook time. Enjoy.

  • Properly prepare the bell peppers: Cut the bell peppers in half lengthwise and remove the seeds and ribs. This will create a "boat" shape that will hold the stuffing.
  • Make flavorful garlic mashed potatoes: Use a combination of Yukon Gold and russet potatoes for a creamy and fluffy texture. Add roasted garlic, butter, milk, sour cream, and seasonings to create a flavorful and rich mashed potato filling.
  • Stuff the bell peppers evenly: Divide the garlic mashed potatoes evenly among the bell pepper halves, making sure to press them down gently to fill any gaps.
  • Top with cheese and bake: Sprinkle grated Parmesan cheese or a blend of shredded cheeses on top of the stuffed bell peppers before baking. This will create a golden brown and crispy crust.
  • Control the baking temperature: Bake the stuffed bell peppers at a moderate temperature (around 375°F/190°C) to ensure that the potatoes cook through without burning the peppers.
