Time 40m

Yield 8 servings

Number Of Ingredients 8

8 boneless skinless chicken breasts
1/2 cup honey Dijon mustard
2 cups panko breadcrumbs
6 tablespoons salted butter, melted
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
12 slices Swiss cheese, cut into quarters
24 rounds Canadian bacon (about 1 pound), cut into half-moons

Steps:

  • Preheat the oven to 425 degrees F.

  • Mix together the breadcrumbs, butter, salt and pepper in a bowl. Sprinkle the breadcrumb mixture evenly over the chicken, using your hands to press the mixture into the mustard. Place a quarter piece of cheese and a half-moon piece of Canadian bacon into each of the slits in each chicken breast. Transfer the stuffed chicken breasts to a baking sheet.
  • Bake until the chicken is cooked through and the breadcrumbs are golden, 20 to 22 minutes. Serve warm with your favorite sides.
  • Freezing instructions: Once the uncooked chicken breasts are assembled, place 4 onto a wax paper-lined baking sheet; repeat with the remaining chicken breasts on a separate lined baking sheet. Transfer the baking sheets to the freezer until the chicken breasts are frozen through, at least 3 hours. Transfer the chicken breasts to 2 wax paper-lined foil pans. Label, date and freeze until ready to eat.
  • When ready to eat, preheat the oven to 425 degrees F. Bake the chicken breasts from frozen until the chicken is cooked through and the breadcrumbs are golden, about 40 minutes. Serve as directed above.

STUFFED CHICKEN WITH CANADIAN BACON

Stuffed Chicken With Canadian Bacon image

I needed a new chicken recipe and it had to only use healthy ingredients. My dad had a heart attack and he is only allowed Asiago cheese and canadian bacon as substitutes for their counter fattening parts.

Provided by Angelofraa

Categories     Chicken Breast

Time 50m

Yield 5 serving(s)

Number Of Ingredients 13

Salad Supreme dry seasoning
grated romano cheese
grated parmesan cheese
steak seasoning (Mrs Dash Steak Grilling Blends)
oregano

paprika
Mrs Dash's extra spicy seasoning
1 1/2 tablespoons crushed garlic

1/2 cup of diced red onion
5 slices of precooked Canadian bacon, diced
5 boneless skinless chicken breasts, thawed & pounded down

Steps:

  • Preheat oven to 350 degrees, line bottom of a glass pan with olive oil and set aside at least 10 – 15 toothpicks near your workstation.

  • Add as much as you want of each seasoning per your taste, I used a couple of shakes for each ingredient and a little extra of the cheeses.
  • Mix all stuffing ingredients together in a bowl.
  • Lay one chicken breast in the shallow seasoning dish to coat the outside, and then in the center of the chicken breast add a line of the stuffing mixture.

Tips:

  • Choose the right chicken breasts: Look for boneless, skinless chicken breasts that are about the same size so they cook evenly.
  • Butterfly the chicken breasts: This will create a pocket for the stuffing. To do this, place the chicken breast flat on a cutting board and slice it horizontally, but not all the way through. Open the chicken breast up like a book.
  • Season the chicken breasts: Sprinkle the chicken breasts with salt, pepper, and garlic powder. You can also add other herbs and spices to taste.
  • Prepare the stuffing: The stuffing for this recipe is made with Canadian bacon, mushrooms, and spinach. You can also add other ingredients to the stuffing, such as cooked rice, bread crumbs, or cheese.
  • Stuff the chicken breasts: Place a scoop of stuffing in the center of each chicken breast. Fold the chicken breast over the stuffing and press to seal.
  • Wrap the chicken breasts in bacon: Wrap each chicken breast with a slice of Canadian bacon. This will help to keep the chicken breasts moist and flavorful.
  • Bake the chicken breasts: Preheat the oven to 400 degrees Fahrenheit. Place the chicken breasts on a baking sheet and bake for 25-30 minutes, or until the chicken is cooked through.
  • Serve the chicken breasts: Serve the chicken breasts hot with your favorite sides.
