1 ½ cups unseasoned stuffing mix
¾ cup chicken stock
1 cup yellow onion, finely diced
½ cup celery, finely diced
½ cup carrot, finely diced
1 ½ teaspoons kosher salt, divided
½ teaspoon freshly ground black pepper, divided
1 ¼ teaspoons McCormick® Rubbed Sage, divided
1 ½ lb ground turkey
1 large egg, beaten
½ cup jellied whole-berry cranberry sauce

  • Preheat the oven to 375°F (190°C). Grease a 9 x 5-inch (22 x 12 cm) loaf pan with butter and line the pan with a piece of parchment paper, leaving overhang on the 2 long sides.

  • In a medium sized bowl add stuffing mix and 1 cup of hot water. Let the stuffing sit for 5 minutes. Meanwhile, in another medium sized bowl mix 1 package of brown gravy mix with 1 cup cold water. Add in ground beef and egg, mix well (this is easiest to do with your hands, gross, I know) After the stuffing has sat for 5 minutes, incorporate the stuffing mix into the ground beef mixture. Grease a bundt pan with non stick spray and then press the ground beef mixture into the pan. Bake at 350°F for 45 to 55 minutes or until no longer pink inside. Instead of using bread crumbs, crackers, or oatmeal, try Pepperidge Farm® Herb Seasoned Stuffing! Perfect for fall-winter comfort-style dinners. Pairs well with traditional mashed potatoes and dinner rolls. After experimenting several times over the course of a few years, I've come up with what I call 'Meatloaf Stuffing'. Mine is more simple than some others but it makes a very dense meatloaf that tastes just like a turkey and dressing dinner. We're debating whether we are going to skip the big family meal this year and just cook this up.

2 lbs ground turkey
1 package of mccormick meatloaf seasoning mix
2 tablespoons vegetable oil
1 jar of store bought turkey gravy (1/4 cup for the meat the rest for the top)
1 box of turkey flavor seasoned stuffing mix (crushed but not bread crumb fine)

Steps:

  • In a large bowl mix the turkey with the seasoning mix, oil, 1/4 cup of gravy, and stuffing mix.
  • Spray a loaf pan with cooking spray and put the meat into the pay making sure to press it down.
  • Cover with Foil and cook for 60 minutes at 375 degrees.
  • After 60 minutes, remove from the oven and uncover. using a the handle of a wooden spoon poke holes in the meatloaf about 1 inch apart.
  • Pour the remaining gravy over the meatloaf and put back in the oven (uncovered) for 10 minutes.
  • Remove from the oven and allow to rest for 10 minutes.
  • Slice and serve.

14 ounces diced tomatoes, any flavor

2 apples, peeled and cut into small dice (McIntosh or Gala)
2 lbs ground turkey
2 large celery ribs
1 large onion
2 cups seasoned stuffing mix, dry
2 cups chicken stock or 2 cups turkey stock
1 egg
1 tablespoon poultry seasoning
1 teaspoon salt
1 teaspoon pepper
olive oil

Steps:

  • First prepare the stuffing by mixing together the stuffing mix and the broth in a large bowl or measuring cup. Allow to bread to absorb the broth, about 2-3 minutes.
  • Peel and chop the apples, and onions. Add about 1 tablespoon of lemon juice to the apples to prevent browning. Dice the celery into pieces as well.
