¾ cup white sugar
¼ cup shortening
1 egg
½ cup milk
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
2 cups fresh blueberries
½ cup white sugar
⅓ cup all-purpose flour
½ teaspoon ground cinnamon
¼ cup butter, softened

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease one 8x8 inch pan.
  • Cream together 3/4 cup sugar, shortening, and egg.
  • In a separate bowl mix together 2 cups flour, baking powder, and salt. Stir into sugar mixture, alternating with milk. Stir in blueberries. Pour into greased 8x8 inch pan.

3/4 cup sugar
1/4 cup butter or 1/4 cup margarine
1 large egg
1 cup milk
2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
2 cups blueberries
2/3 cup sugar
2/3 cup flour
2 teaspoons cinnamon
1/4 cup butter, melted

Steps:

  • Preheat oven to 375°.
  • Grease and flour an 8-inch square pan.
  • Mix together first 7 ingredients.
  • Gently stir in blueberries.
  • Place in prepared pan.
  • To make topping, mix last 4 ingredients together and sprinkle over cake mixture.
  • Bake in preheated oven for 45-50 minutes.

1 teaspoon vanilla extract
2-1/4 cups all-purpose flour, divided

2-1/2 cups fresh or frozen blueberries
TOPPING:
1/4 cup all-purpose flour
1/4 cup packed brown sugar
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 cup cold butter, cubed

Steps:

  • In a bowl, cream butter and sugar. Add eggs and vanilla; mix well. Combine 2 cups of flour, baking powder and salt; add to creamed mixture alternately with buttermilk. Mix well. Toss berries in remaining flour; fold into batter (discard any flour that doesn't stick to berries). Spread batter in a greased 9-in. square baking pan. 1 cup whole wheat pastry flour (or spelt flour)
1 cup all-purpose flour
2 teaspoons baking powder
3/4 cup maple syrup
1/3 cup canola oil
2 teaspoons vanilla extract

4 cups fresh blueberries

  • Preheat oven to 350°F.
