6 eggs, beaten
1 cup milk
½ teaspoon salt
⅛ teaspoon ground black pepper
cooking spray
3 slices bread, torn in pieces
1 (12 ounce) package cooked breakfast sausage
½ cup Monterey Jack cheese
½ cup shredded Cheddar cheese

Steps:

  • Whisk eggs, milk, salt, and black pepper together in a bowl.
  • Spray a 2-quart baking dish with cooking spray. Spread bread pieces out in an even layer on the bottom of the prepared dish; top with sausage, Monterey Jack cheese, egg mixture, and Cheddar cheese, respectively. Cover the baking dish with plastic wrap and refrigerate, 8 hours to overnight.
  • Preheat oven to 325 degrees F (165 degrees C). Remove casserole from refrigerator and let sit at room temperature for 15 minutes.
  • Bake casserole in the preheated oven until bubbling and hot throughout, about 45 minutes.

6-8 slices bread
1 lb sausage
1 cup swiss cheese, grated
1 cup sharp cheddar cheese, grated
1/2 cup mushrooms: either sauteed, or canned mushrooms which have been drained
3/4 cups half and half
1/4 cup milk
1 tsp worcestershire sauce
1 tsp mustard
5 eggs, beaten slightly
Pam or vegetable oil (enough to coat the pan)
salt and pepper to taste

Steps:

  • Grease a 9x13 pan with Pam or oil. Remove crust from bread and cube bread. Line bottom of pan with cubed bread. Cook and drain sausage. Sprinkle cooked sausage over bread. Sprinkle cheees and mushrooms over pan. In a separate bowl, lightly beat eggs, then add cream & milk. Stir in seasonings, then pour egg mixture over casserole. Refigerate overnight. In the morning, bake at 350 degrees for 45 min - 1 hour, until slightly browned on top.

32 ounces frozen hash browns, thawed
8 ounces sour cream
10 3/4 ounces cream of mushroom soup
4 ounces Ritz crackers (or 1 roll)
2 cups cheddar cheese, shredded
8 ounces French onion dip
1/2 cup butter, melted

Steps:

  • Preheat oven to 350.
  • Thaw hash browns & mix well with cheese, sour cream, onion dip & mushroom soup. Spread evenly in 9" x 13" pan.
  • Crush crackers & mix with melted butter. Sprinkle over top of casserole.
  • Bake 30 minutes, or until done.
