1 pound lean ground beef
1 onion (diced)
1 can mushrooms (sliced, drained)
1 clove garlic (minced)
½ teaspoon oregano
10 ounces spinach (chopped, frozen and squeezed dry)
1 cup instant rice
1 ¼ cup water
10 ½ ounces cream of celery soup (condensed)
⅓ cup sour cream
salt & pepper to taste
1 cup mozzarella cheese (shredded)
½ cup frozen veggies

Steps:

  • Preheat oven to 350°F.
  • Brown beef, onion and garlic until no pink remains. Drain any fat.
  • Combine beef mixture with all remaining ingredients except cheese.
  • Spread mixture into a 9x13 pan and bake covered for 40-45 minutes or until rice is tender.
  • Add cheese, broil for 3 mins or until golden.

1 lb ground beef
1/2 cup uncooked rice
1 (10 1/2 ounce) can cream of celery soup or 1 (10 1/2 ounce) can cream of asparagus soup
1 1/4 cups water
1 teaspoon salt
1/2 cup chopped celery
black pepper
1/4 cup onion, chopped (optional)
1/4 cup green bell pepper, chopped fine (optional)

Steps:

  • Brown beef with onion (if using) and drain.
  • Add rice, soup, water, celery, peppers (if using), salt and black pepper, mix well.
  • Place in greased two-quart casserole dish and bake, covered, for 1 hour and 15 minutes at 350 degrees F.
  • Serve and enjoy!

1/4 cup grated Parmesan (1 ounce)
2 tablespoons olive oil, divided
5 cups reserved Quick Meat Sauce (from Gnocchi with Quick Meat Sauce)
1/2 cup long-grain white rice
1/2 medium yellow onion, thinly sliced lengthwise
2 zucchini or summer squash, very thinly sliced
Salt and pepper

Steps:

  • Preheat oven to 475 degrees. Combine breadcrumbs, Parmesan, and 1 tablespoon oil. In a large cast-iron skillet, bring meat sauce to a rapid simmer over high. Stir in rice and remove from heat. Top with onion, then carefully arrange zucchini in a single, slightly overlapping layer. Season with salt and pepper, drizzle with remaining tablespoon oil, and top with breadcrumb mixture. Return to heat and bring to a simmer. Cover with foil and bake 10 minutes. Remove foil and bake until rice is cooked through and breadcrumbs are golden, about 10 minutes more. 2 cups uncooked brown rice
2 cubes vegetable bouillon
½ medium lime, juiced
1 tablespoon oil, or to taste
1 medium onion, chopped
1 tablespoon dried, minced garlic
1 ½ teaspoons ground cumin
½ teaspoon chili powder
1 (15 ounce) can pinto beans, rinsed and drained
1 (8 ounce) jar salsa
3 medium carrots, grated
2 cups shredded Cheddar cheese, divided

Steps:

  • Combine water, rice, and bouillon cubes in a wide, shallow pot over medium-high heat. Bring to a boil, stirring a few times early on to dissolve bouillon cubes. 2 lbs round steaks, cut into 1 inch cubes (buy tenderized)
2 tablespoons butter, melted
1 (12 ounce) can tomato paste
1/3 cup beef broth
1/3 cup red wine
1/4 cup red wine vinegar
1/2 cup black olives (sliced)
1 tablespoon light brown sugar
2 garlic cloves, minced
2 bay leaves (whole)
1/4 cup raisins
1/4 teaspoon cinnamon
1/8 teaspoon ground cloves
3 cups cooked rice

Steps:

  • Preheat oven to 375 degrees.
  • Mix steak cubes and butter in a large bowl to cover steak with butter.
  • Arrange steak cubes in a large baking dish.
  • Mix together tomato paste, broth, wine and vinegar in mixing bowl.
  • Stir in olives, brown sugar and garlic.
  • Pour over steak cubes to coat.

1 teaspoon brown sugar

1 can refried beans ((15 ounce))
1/2 cup shredded cheddar cheese
2 Tablespoons chopped fresh cilantro
