2 1/2 cups chopped celery
2 small white potatoes, peeled and cubed
1/4 cup red wine
2 tablespoons lemon juice
1 bay leaf
1 (32 ounce) carton chicken broth
1 teaspoon chopped fresh thyme
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
salt and pepper to taste

Steps:

  • Heat the olive oil in a large saucepan over medium-high heat. Stir in the onions, celery, and potatoes. Cook and stir until the onion has softened and turned translucent, about 10 minutes. 1 quart chicken bone broth
1 ½ pounds baby yellow potatoes, peeled
1 small bunch fresh parsley
1 teaspoon dried thyme, or to taste
½ teaspoon salt-free seasoning blend (such as Penzeys Mural of Flavor), or to taste
