Provided by Gwenaelle Le Cochennec

Categories     Sides

Yield 6 servings

Number Of Ingredients 16

2 lb small red potato, scrubbed and halved
1 tablespoon salt
2 ears corn
1 tablespoon dijon mustard
3 tablespoons pickle juice, divided
1 red bell pepper
1 cup vegan mayonnaise, or regular
½ teaspoon paprika
1 ½ teaspoons salt
1 teaspoon pepper
½ cup celery, diced
⅓ cup dill pickle, coarsely chopped
¼ cup red onion, chopped
⅓ cup green onion, chopped
2 tablespoons fresh dill, minced
2 tablespoons fresh chives, chopped, for garnish

Steps:

  • Place the potatoes in a large pot with enough water to cover by 2 inches (5 cm). Cover and bring to a boil over high heat.
  • Once boiling, uncover, add the salt and corn, and reduce the heat to medium. Simmer for 10-15 minutes, until the potatoes and the corn are tender. Drain.
  • Add the potatoes to a large bowl. Combine 2 tablespoons of pickle juice with the mustard and pour it over the still-warm potatoes. Toss to coat. Refrigerate for at least 30 minutes or up to an hour.
  • Dice the red bell pepper, removing the ribs and seeds.
  • Set a medium bowl upside down in a large bowl and stand a corn cob on the inverted bowl. Cut the corn kernels from the cobs, letting them fall into the larger bowl.
  • In a medium bowl, combine the mayonnaise, remaining tablespoon of pickle juice, paprika, salt, and pepper and stir until smooth.
  • Add the bell pepper, corn, celery, pickles, red onion, green onions, and dill to the bowl with the potatoes. Pour the sauce over and toss to coat.
  • Sprinkle the potato salad with chopped chives, for garnish.
  • Enjoy!

1 tablespoon fresh lemon juice
1 cup apple juice
1/2 cup well-chilled heavy cream

While potatoes are still warm, layer one third in a large serving dish or bowl and drizzle with 1 tablespoon vinegar. Season potatoes with salt and pepper. Continue layering in same manner with remaining potatoes and vinegar, seasoning with salt and pepper. Peel, quarter, and core apples. Cut quarters crosswise into 1/8-inch-thick pieces and in a bowl toss with lemon juice. In a small saucepan simmer apple juice until reduced to about 3 tablespoons. In a bowl beat cream until it just holds soft peaks and gently but thoroughly fold in reduced apple juice, mayonnaise, parsley, Calvados, and pepper. Season sauce with salt and gently toss together with potatoes and apples.

COOL SUMMER SALAD

Cool Summer Salad image

With the weather getting way too hot in Texas, the search is on to find food that goes great with BBQ and light enough not to weigh you down in the heat. I had this recipe on my phone for quite some time and I'm not sure where it came from, but boy was it a hit!

1 teaspoon salt

Steps:

  • Toss romaine lettuce, Swiss Cheese, cashews, apple, pear, and cranberries together in a large salad bowl.

Tips:

  • Choose the right potatoes: Waxy potatoes, such as red potatoes or Yukon Gold, hold their shape better than starchy potatoes, such as Russet potatoes, and are less likely to fall apart when cooked.
  • Cook the potatoes properly: To prevent the potatoes from becoming mushy, cook them until they are just tender when pierced with a fork. Overcooking will make them more likely to fall apart.
  • Cool the potatoes completely: Before adding the potatoes to the salad, let them cool completely. This will help prevent them from absorbing too much of the dressing.
  • Use a light dressing: A heavy dressing will weigh down the salad and make it less refreshing. A vinaigrette or mayonnaise-based dressing is a good option.
  • Add some crunch: To add some crunch to the salad, add some chopped celery, carrots, or radishes.
  • Serve the salad chilled: Potato salad is best served chilled. If you are making it ahead of time, store it in the refrigerator for at least 30 minutes before serving.

Conclusion:

Summer potato salad with apples is a delicious and refreshing side dish that is perfect for any summer gathering. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make the perfect summer potato salad that everyone will love.
