4 tablespoons monosodium glutamate (MSG)
2 teaspoons cayenne pepper
2 teaspoons ground black pepper
3 teaspoons garlic powder
3 teaspoons brown sugar
2 ½ teaspoons mustard powder
2 teaspoons whole black peppercorns
4 teaspoons liquid smoke flavoring

Steps:

  • In a large bowl, combine the beef, meat tenderizer, cayenne pepper, ground black pepper, garlic powder, brown sugar, mustard powder and peppercorns and mix well. Pour the liquid smoke over the mixture, but do not mix. Cover and place in the refrigerator for at least 24 hours.
  • Preheat oven to 150 degrees F (65 degrees C).
  • Remove the beef mixture from refrigerator and mix well. Roll into 1 1/2x9 inch logs and place in a 9x13 inch baking dish.
  • Bake at 150 degrees F (65 degrees C) for 4 hours. Remove from oven and let cool.

1 lb. Bratwurst*
1 lb. Beef Hot Dogs*
Tangy Asian Sauce
1/2 cup mayonnaise
1/2 cup ketchup
1 TSP - TBSP, to taste, Chinese Red Pepper Sauce, or other hot sauce
Mustard Sauce
1/2 cup strong mustard, such as Dijon
1/2 cup mayonnaise
1/2 cup plain ketchup
*if using fresh sausage, allow for extra cooking time.

Steps:

  • When the grill is hot, place all of the sausage and hot dogs on the grill. For pre-cooked meats, grill about 5-10 minutes on one side. Turn, and cook another 5-10 minutes. When hot, remove from grill to a cutting board. Using an oven mitt, cut into 1/2 inch slices and transfer to a service plate or tray. For each sauce, simply mix all ingredients until well blending. Put both sauces and the ketchup in 3 attractive bowls. Place the bowls on the plate with the sausage and some toothpicks, and serve.

1 pkg. (13 oz.) OSCAR MAYER Natural Uncured Turkey Sausage, cut crosswise in half
2 tsp. poppy seed
1/4 cup KRAFT Real Mayo
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 Tbsp. chopped fresh parsley
2 Tbsp. GREY POUPON Dijon Mustard

Steps:

  • Heat oven to 400ºF.
  • Remove pizza dough from can. (Do not unroll dough.) Place dough on cutting board; cut crosswise in half. Unroll each half. Place 3 Singles down center of each dough piece; top diagonally with 1 sausage piece. Fold corners of dough over ends of each sausage piece, then fold 1 of the remaining corners of dough over sausage. Roll dough to completely enclose sausage; pinch seams together to seal. Spray lightly with cooking spray; roll in poppy seed until evenly coated.
  • Place, seam sides down, on baking sheet sprayed with cooking spray.

5 teaspoons sugar-based curing mixture (such as Morton® Tender Quick®)
¼ cup mustard seed
3 tablespoons garlic powder
1 teaspoon cayenne pepper
1 tablespoon red pepper flakes
1 tablespoon salt
½ teaspoon hickory-flavored liquid smoke

Steps:

  • In a large bowl, mix beef, curing mixture, mustard seed, garlic powder, cayenne, red pepper flakes, salt, and liquid smoke. Cover with plastic, and refrigerate for three days, mixing well once a day.
  • On the fourth day, preheat oven to 200 degrees F (100 degrees C).
  • Shape the mixture into five logs, and place on a wire rack over a large drip pan. Bake for eight hours, then remove to cool on paper towels. Let cool, then wrap logs individually in plastic wrap. Chill completely before slicing. They also freeze well.

1 cup breadcrumbs (soft fresh)
1/4 cup coriander (finely chopped)
2 green onions (finely chopped)
1 chili (large red, finely chopped)
1 garlic clove (minced)
4 sheets puff pastry (frozen, thawed)
1 egg (lightly beaten)
3 teaspoons sesame seeds
1/2 cup sweet chili sauce
2 tablespoons lime juice (or lemon juice)
1 teaspoon fish sauce
2 teaspoons ginger (finely grated)
1 green onion (finely chopped)
2 tablespoons water

Steps:

  • Preheat oven to 210C (190C fan forced).
  • Line 2 trays with baking paper.
  • Combine chicken mince, sausage mince, breadcrumbs, coriander, green onions, chili and garlic and mix well to fully combine.
  • Place a sheet of pastry on a flat surface and spoon a quarter of the mince mix along one edge in a sausage shape and then roll to completely encase.
  • Trim ends if required and then cut roll into 4 even rolls, make a couple of small slits on the top of each roll and then place seam side down on the baking tray, repeat with rest of mix.
  • Brush rolls with the egg and sprinkle with the sesame seeds.
  • Bake for 25 to 30 minutes or until puffed and golden.

6 canned or jarred artichokes , halved
100g cherry tomatoes

400g can flageolet or butter beans , drained and rinsed
150ml low-salt vegetable stock
