1-1/2 cups biscuit/baking mix
1/3 cup shredded part-skim mozzarella cheese
1/4 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/2 cup buttermilk
3 tablespoons oil-packed sun-dried tomatoes, drained and finely chopped
1-1/2 teaspoons butter, melted

Steps:

  • In a large bowl, combine the biscuit mix, cheeses, Italian seasoning, onion powder and garlic powder. Stir in buttermilk and tomatoes just until moistened., Drop by 1/4 cupfuls 2 in. apart onto a greased baking sheet. Bake at 425° for 8-12 minutes or until golden brown. Brush with butter. 2 cups unbleached white flour
1 tablespoon baking powder
1 tablespoon granulated sugar
1 teaspoon salt
1/2 cup unsalted butter, frozen
2 eggs
1/2 cup buttermilk
1/3 cup sun-dried tomato, finely chopped
1 tablespoon finely chopped thyme

Steps:

  • Preheat oven to 400 degrees. In a large bowl, sift together the dry ingredients. Finely chop the butter. By hand or in a food processor, blend with the dry ingredients. The mixture should not be thoroughly blended, but should have small, pea-sized clumps of butter and flour. In a small bowl, whisk the eggs and buttermilk together. Stir in the sun-dried tomatoes and thyme. Work together the dry and moist ingredients until the dough begins to come together. Do not overwork or your biscuits will be tough. Turn the dough onto a floured board and roll into 1/2-inch thickness. Fold in half and roll out again. Fold in half one more time and roll into 3/4-inch thickness. Cut the dough into 2-inch square biscuits. Bake on a lightly oiled baking sheet for about 12 minutes or until the biscuits are fluffy and browned.

1 tablespoon grated Parmesan cheese

¼ cup olive oil, divided
¾ pound dry fettuccine pasta
½ cup plain fat-free Greek yogurt
¼ cup reduced-fat sour cream
½ cup sun-dried tomatoes, sliced
5 cloves garlic, minced
1 (14.5 ounce) can petite diced tomatoes, drained
2 tablespoons sugar, or more to taste
1 tablespoon tomato paste
salt and freshly ground black pepper to taste
1 ½ cups baby spinach
crushed red pepper flakes
