1/2 cup sun-dried tomatoes
1/4 cup fresh-squeezed orange juice (about 1 medium orange)
3 tablespoons extra-virgin olive oil
1 tablespoon apple cider vinegar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Salt
One 8-ounce package gluten-free ancient grain fusilli pasta, such as TruRoots
3 cups chopped baby arugula
3/4 cup pitted Kalamata olives, chopped
1/2 cup packed fresh basil leaves, chopped
7 ounces fresh mozzarella, cut into 1/3-inch dice

Steps:

  • For the vinaigrette: Place the sun-dried tomatoes in a food processor and pulse to chop. Add the orange juice, olive oil, vinegar, salt and pepper. Process to a slightly chunky, relatively thick puree.
  • To assemble: In a large pot of boiling salted water, cook the pasta according to package directions. Drain and rinse in cold water.

1 pound linguine pasta
1 cup 6 ounces chopped or julienned sun-dried tomatoes in oil, drained
1 cup 4 ounces medium green olives, pitted
1 packed cup fresh basil leaves
1 clove garlic (roughly chopped)
1/3 cup extra-virgin olive oil
Zest and juice of 1 large lemon
3/4 cup grated Parmesan
Salt and freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain and reserve about 1 cup of the pasta water. Place the pasta in a large serving bowl.
  • In a food processor, combine the sun-dried tomatoes, olives, basil, garlic, oil, lemon zest, and lemon juice. Pulse until blended but still chunky.

1 (8 ounce) jar sun-dried tomatoes packed in oil, drained and chopped, oil reserved
1 tablespoon olive oil
1/2 onion, thinly sliced
1 garlic clove, minced
2 tablespoons sugar
1/4 cup red wine vinegar
1 cup water
1/2 cup chicken broth
1 teaspoon chopped fresh thyme leave
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 baguette, cut into 3/4-inch slices
1/4 cup olive oil
salt
fresh ground black pepper
5 ounces goat cheese, room temperature
2 teaspoons chopped fresh thyme leaves

Steps:

  • For the Sun-dried Tomato Jam: Place a medium saucepan over medium heat. Add the chopped sun-dried tomatoes, 1 tablespoon of the reserved sun-dried tomato oil, olive oil, onion, and garlic. Stir and cook until the onions are soft and beginning to brown at the edges, about 5 to 7 minutes. Add the sugar, vinegar, water, chicken broth, thyme, salt, and pepper. Bring the liquid to a boil, reduce the heat, and simmer, covered, for 30 minutes. Remove the cover and continue simmering until most of the liquid is reduced and the mixture is the consistency of jam, about 5 to 10 more minutes. Remove from the heat and set aside.
  • For the Crostini: Preheat the oven to 400 degrees F. Line a baking sheet with foil.
  • Place the baguette slices on the baking sheet. Using a pastry brush, lightly coat the baguette slices with olive oil. Sprinkle with salt and pepper. Bake until lightly toasted, about 8 minutes.

1/2 cup plain breadcrumbs
1/3 cup chopped fresh flat-leaf parsley
1/4 cup chopped garlic and herb-marinated sun-dried tomato, I used plain sun-dried tomatoes
2 garlic cloves, chopped (optional)
2 eggs, at room temperature, lightly beaten
2 tablespoons whole milk
1/2 cup feta cheese, crumbled
1 1/2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
1 lb ground turkey, preferably dark meat

Steps:

  • Place oven rack in the center of the oven.
  • Preheat oven to 375 degrees F.
  • Spray a 9 by 5 inch loaf pan with cooking spray.
  • In a large bowl, stir together the bread crumbs, parsley, sun-dried tomatoes, garlic, if using, eggs, milk, feta cheese. salt and pepper.

1/2 medium onion, thinly sliced

1 cup water
1/2 cup chicken stock
1/4 cup red wine vinegar
1 tablespoon sugar
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Drain tomatoes, reserving 1 tablespoon of the oil. Finely chop tomatoes. In a large saucepan, saute tomatoes and onion in reserved oil until onion is tender. Add garlic; cook 1 minute longer., Stir in the water, stock, vinegar, sugar, basil, salt and pepper., Bring to a boil. Reduce heat; cover and simmer for 30 minutes.
