I whip up these simple banana pancakes for my toddler for a quick homemade breakfast on busy mornings. It gets him to eat eggs and helps me use up those last ripe bananas!

1 teaspoon butter
1 large banana, broken into chunks
1 large egg

Steps:

  • Heat a large skillet over medium heat; add butter.
  • Mash banana chunks in a bowl using a fork until it becomes a wet consistency. Add egg and whisk mixture until batter is smooth.
  • Drop batter into the hot butter to make 2 pancakes. Cook until bubbles form and the edges are dry, about 3 minutes. Flip and cook until browned on the other side, about 2 minutes.

2 large bananas (peeled)
½ cup Sunbutter
2 large eggs
1 teaspoon baking powder
Grapeseed or vegetable oil (for cooking)

Steps:

  • Preheat the oven to 200ºF.
  • Mash the bananas in a large mixing bowl. Add the Sunbutter, eggs, and baking powder. Mix well.
  • Heat a skillet or griddle over medium-low heat until a drop of water sprinkled on the pan sizzles immediately. Brush the pan with oil and let heat for a few seconds.
  • Ladle ¼ cup of pancake batter onto the pan for each pancake. Cook until the bottoms are golden brown and the edges appear dry, about 5 minutes. Gently flip and cook for another minute or until the bottoms are browned and the pancakes feel firm to the touch.
  • Keep the cooked pancakes warm in the oven while preparing the rest. Serve warm.
