SUNDAY BEANS

Sunday Beans image

This recipe is authentic to the Caribbean larder: beans, garlic, cumin, citrus and meat, bubbling together on the stove. Of course, rice and beans are served across Latin America, in different variations, with different beans, for different reasons. Adding a further delight to the plate would not be in error: some fried pork chops, say, or a dish of fast and flavorful roast chicken, dusted liberally with cumin and served beneath a shower of lime juice, fresh chopped cilantro and garlic.

Time 30m

Yield Serves 8

Number Of Ingredients 12

2 tablespoons olive oil
4 ounces slab bacon, diced
1 medium yellow onion, peeled and diced
3 cloves garlic, peeled and minced
1 medium red pepper, seeded and diced
2 tablespoons ground cumin
1 tablespoon ground coriander
1 cup orange juice
1/2 cup pineapple juice
3 (151/2-ounce) cans red kidney beans, drained
Kosher salt
freshly ground black pepper

Steps:

  • Heat a large saucepan over medium-high heat. Add the olive oil and, a few moments later, the bacon. Cook, stirring occasionally, until the fat has begun to render out of the bacon and the meat is beginning to crisp, about 5 minutes.
  • Lower the heat to medium and add the onion, garlic and pepper. Cook, stirring occasionally, until the vegetables have softened, 5 to 7 minutes.
  • Add the cumin and coriander. They will absorb the heated oil in the pan and grow fragrant. Stir for 1 to 2 minutes and then add the juices. Raise the heat to high until the mixture begins to simmer, then lower the heat and reduce to one half of its volume. Taste and adjust the seasonings.
  • Stir in the beans. After 5 minutes stir again, then taste and adjust the seasonings. (The mixture can keep, softly bubbling on the stove, for hours. Add a little juice or water if necessary. Stir occasionally.) Serve with white rice.

Categories     side-dish

Time 1h10m

Yield 8 to 10 servings

Number Of Ingredients 14

6 pieces bacon
1 cup chopped onion
6 to 8 sprigs fresh thyme
Kosher salt and freshly ground black pepper
1/2 cup dark brown sugar
3 cloves garlic, grated on a rasp
1 tablespoon dry mustard
1 teaspoon sweet paprika
1/2 cup ketchup
2 tablespoons Worcestershire sauce
2 tablespoons Sriracha
4 Roma tomatoes, seeded and chopped
3 (15.5-ounce) cans cannellini beans, 1 drained
4 cups beef stock

Steps:

  • Heat the oven to 350 degrees F.
  • Over a Dutch oven or oven-safe pot, cut 3 strips of the bacon into small pieces and cook on medium-high heat until the fat is rendered and the bacon is crisp. Remove the bacon to a paper towel-lined plate leaving the fat in the pot. Add the onions, thyme, and then season with salt and pepper. Cook until the onions are tender and translucent, about 5 minutes. Add the brown sugar, garlic, dry mustard, paprika, ketchup, Worcestershire sauce, and Sriracha. Stir to mix and cook until the brown sugar melts and the pot begins to bubble. Add the tomatoes, beans (don't drain 2 of the cans), stock, and remaining 3 strips of uncooked bacon.
  • Cover and place in the oven to bake for 40 minutes, remove the lid and continue to cook for 20 minutes more. Remove from the oven and fish out the bacon strips and discard them, or leave them if you don't mind the texture. Serve the beans warm with chopped bacon sprinkled over the top.

FEIJOADA DE DOMINGO (SUNDAY BEAN STEW)

Feijoada de Domingo (Sunday Bean Stew) image

A very traditional Brazilian stew made with black beans, sausage, and all the tasty bits of pork. For a traditional Brazilian spread, serve hot with white rice and collard greens. You can look for the greens in Caribbean markets, but if unavailable try kale instead.

SUNDAY BLACK-BEAN SOUP

Sunday Black-Bean Soup image

Not everyone in a household wants to watch football games on Sunday. For those looking for an excuse to wander in and out, nothing beats cooking. A slow-simmering soup is the perfect ploy for the less-than-dedicated television viewer. It requires sporadic attention, providing a reason to leave the television viewing room as often as the cook desires. What makes the soup appealing is that by the time the games are over, dinner is ready. What makes it irresistible is that it also provides dinner for one weekday evening.

Categories     dinner, lunch, soups and stews, appetizer, main course

Time 3h15m

Yield 5 2-cup servings plus sausage

Number Of Ingredients 15

1 pound dried black beans
1/2 pound bacon, preferably nitrite-free
3 cups chicken stock
1 to 2 tablespoons canola or corn oil
4 coarsely chopped carrots
3 coarsely chopped onions
3 coarsely chopped celery ribs
1/2 to 1 fresh jalapeno pepper or 1 3 1/2- to 4-ounce can mild jalapenos, minced
3 finely chopped garlic cloves
1 teaspoon ground cumin
Salt to taste
1 pound spicy sausage (see note)
1 cup dry sherry
Juice from 1/2 to 1 lime
5 tablespoons chopped fresh cilantro, optional

Steps:

  • To soak beans quickly, cover them with generous amount of water, cover pot, bring water to boil and boil 2 minutes. Remove cover and allow beans to sit in the liquid for one hour. Drain.
  • Meanwhile, slice meaty part of bacon from fat. Discard fat.
  • When beans are ready to cook, add meaty bacon to beans along with chicken stock and enough water to cover generously; cover and bring to a boil. Reduce heat and simmer.
  • In hot oil, saute carrots, onions, celery, jalapeno, garlic and cumin until onions are golden. When vegetables are ready, add to pot of beans. If there is not enough water, add more. Cook beans 1 1/2 to 2 hours, or until tender. Season with salt, if desired.
  • Just before beans are ready, cook sausage; slice into small chunks.
  • Drain the bean mixture and reserve cooking liquid. Puree beans and vegetables, using some of the reserved liquid to make a thick soup. Return to cooking pot. Stir in sherry and lime juice. Add more reserved liquid, if necessary, and reheat to serve.
  • Divide sausage chunks among bowls, and spoon soup into each bowl. Sprinkle with cilantro.
