6-8 slices bacon, diced
6 small breakfast sausages, casings removed (or 1/3 of a pound ground sausage, your favorite variety)
1/3 cup onion, diced
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons unsalted butter, cut into 1/2-inch pieces
1 cup cheddar cheese, shredded
3/4 cup buttermilk

Steps:

  • Preheat your oven to 400 degrees. Line rimmed baking sheet with parchment paper and set aside.
  • In a skillet, over medium to medium high heat, cook bacon until crisp and onions until tender. Remove to drain on paper towel. Set aside.
  • Remove casings from sausages and dice meat.
  • In a large bowl combine flour, baking powder, salt, and pepper. Stir with a whisk until blended. Add butter and using a fork or your fingers mix until mixture resembles coarse meal, or a pile of crumbs. Add uncooked sausage, cooked bacon and onions, and cheddar and stir until blended. Add buttermilk and stir until combined.
  • Work with wet hands, roll dough into bite sides balls. Place on your prepared sheet, as evenly spaced as possible. Bake until a golden brown color, 20 to 26 minutes. Rotate the baking sheet halfway through baking if your oven has a hot spot! Transfer cooked sausage balls to a rack to cool if desired. Serve warm with dips such as ketchup, sweet and sour sauce, ranch dressing, a sunny side up egg or whatever your heart desires!

3 scant cups Bisquick baking mix
1 pound pork sausage at room temperature (I use 'hot')
16 ounces sharp cheddar cheese, shredded (4 cups)
1/4 cup chopped fresh chives or parsley (optional)

  • Combine all ingredients in a stand mixer then mix at low speed using the paddle attachment (or mix by hand) until all ingredients are evenly combined.
  • Roll dough into 1 1/2 inch balls and place on a baking sheet one inch apart. I used my handy-dandy cookie scoop to make quick work out of portioning these.

  • Leave the sausage out for about 10 minutes to soften. You won't be pre-cooking the sausage.
  • Preheat the oven to 350°F. Line a baking sheet with foil or parchment paper for easy clean up. These tend to stick to the pan if not.
  • In a large bowl or zip top bag, add the meat and biscuit mix. Add a dash of pepper. Mix very well. Then add in the cheese and parsley if desired. Mix until combined. You may need to mix with your hands. Add a Tablespoon or two of milk if your mix seems dry.
  • Form into balls. I like to use a medium size cookie scoop (about 1 1/2 Tablespoons).
  • Bake for 20 minutes (flipping half way through), or until cooked through.
