- Preheat large skillet over medium-high heat with the 2 tablespoons olive oil.
- Add onions ans season with salt and pepper.
- Cover pan with foil and set a lid or plate on top to smother onions, for 5 minutes.
- Add mushrooms to the onions and smother them for another 5 minutes, stirring occasionally.
- Uncover pan and let juices cook off a little. Sprinkle with the flour.
- Cook for 1 minute; add wine and chicken broth and cook sauce until nice and thick, about 2 minutes.
- Combine ground turkey, cheese, salt and pepper, poultry seasoning, and cayenne pepper in a medium bowl.
- Score the meat with the side of your hand to separate it into 4 equal amounts.

- Mix meats, parsley and powders in a large bowl.
- Divide mixture into 8 equal portions (6 oz ea).
- Gently form into the desired sized disk, generally about 4" diameter, 3/4" thick seems to work pretty good.
- Don't overwork the meat, it takes the tenderness out of it.
- At this point you can place the burgers, wrapped in plastic, in the fridge for a day or so without any change of flavor.
- Could be frozen as well.
- Press your thumb in the center of each burger to form a depression about 1/2 the thickness of the burger.
- This prevents the football burger problem that everyone squeezes the burger for.
- Right before cooking brush a bit of olive oil on the burgers and season with garlic salt and pepper.
- Cook on a VERY hot grill, about 4 minutes.
- Extinguish flare-ups as required.
- Turn once and cook for an additional 4 minutes for a hot pink center (3 minutes for rare, 5 minutes for well done) Add cheese (if desired) for the last 60 seconds or so.
- The key here is to form a crust that will seal in the juices and yield a juicy, flavorful burger.
- Can also be done in a hot cast iron skillet on the stove.

- 2. You will need a blender, or food processor fitted with an S-Blade to make this recipe.
- 3. The beans are an important element in the flavor of these burgers. I make my own (I will share the recipe in a bit); however, when it comes to canned beans, some of my absolute favorite ones are Bush's Baked Beans. Those folks know how to make 'em tasty. - 4. Gather your ingredients (mise en place).
- 5. Cook the rice according to package directions, and then allow to cool.
- 6. Add the beans to a large bowl, and crush with a fork. Do not turn them into mush... leave some bits.
- 7. Place the sunflower seeds into a blender/food processor, and blend until fine, but do not blend to the point that it becomes a paste. Trust me, it does not take long for that to happen.
- 8. Add the remaining ingredients, but not the rice, and use one-second pulses until everything is nicely combined.
- 9. Add the blended ingredients, along with the rice into the large bowl with the beans, and mix with wet hands until combined, then shape into burger patties.
- 10. If you are making sliders, you will probably get about 20; if you are doing full-size patties, you will probably get about 8.
- 11. You can stick these into a 370f (188c) oven until they begin to brown, about 12 - 14 minutes, or you could fry them up in a pan with a bit of oil.
- 12. PLATE/PRESENT
- 13. Mix the dressing together, if using, and spread it over the burger before serving. Enjoy.
