Time 30m

Yield 10-12 tortillas, 4-6 serving(s)

Number Of Ingredients 2

2 cups flour tortilla mix, white wing brand
1/2 cup warm water

Steps:

  • In a large bowl, add 2 cups of White Wing tortilla mix. (White Wing can be found next to the regular flour, they also make a mix for corn tortillas that is also very good).
  • Add 1/2 cup water.
  • Mix until it comes together. May have to add more water if it is too thick or more mix if too thin.
  • After mixing, cover bowl with warm cloth for about 10 minutes.
  • Pinch small balls of mix and roll out tortilla, (this takes practice).
  • Heat comale (mexican griddle or cast iron griddle) on medium heat.
  • Cook on one side for about 30-45 seconds, flip and cook another 30-45 seconds. Don't leave on too long or they get hard.
  • Keep warm in a tortilla warmer. I usually make them and serve them immediately while my family is eating. (traditional way).

SUPER EASY TORTILLA SOUP

Super Easy Tortilla Soup image

A really easy and affordable quick meal that leaves lots of room for individual creativity. This is a big hit with my singer friends when they are sick. Its like a spicy chicken soup. You can also leave out the cheese and chips if you are trying for something light...

Categories     One Dish Meal

Time 15m

Yield 4 serving(s)

Number Of Ingredients 4

2 (19 ounce) cans chicken and wild rice soup (I prefer Progresso)
1 (10 ounce) can diced tomatoes with mild green chilies
1 cup sharp cheddar cheese, shredded
6 ounces tortilla chips, crushed

Steps:

  • Puree the tomatoes in a blender or food processor.
  • Pour soup and tomatoes into a stockpot and warm over medium heat.
  • To serve, top with chips and cheese.
  • I make this with a number of possible variations-- some good additions are: shredded cooked chicken thighs or breasts, sour cream, black beans, black olives, a can of mexi-corn, sliced avocados, other varieties of cheese, chopped green onions.

Tips:

  • Make sure to use masa harina for the tortillas. It is a special type of corn flour that will give the tortillas their authentic flavor and texture.
  • The dough should be soft and pliable, but not sticky. If it is too sticky, add more masa harina. If it is too dry, add more water.
  • Heat a griddle or skillet over medium heat. Do not use oil or butter, as this will make the tortillas greasy.
  • Cook the tortillas for about 1-2 minutes per side, or until they are golden brown and slightly puffed up.
  • Once the tortillas are cooked, wrap them in a damp cloth or place them in a plastic bag to keep them moist.

Conclusion:

Making homemade tortillas is a fun and rewarding experience. With a little practice, you can make delicious tortillas that are perfect for tacos, burritos, quesadillas, or any other Mexican dish. So next time you're craving Mexican food, give these recipes a try!
