3 tablespoons olive oil
3 tablespoons butter
1 pound button mushrooms, sliced
1 clove garlic, thinly sliced
1 tablespoon red cooking wine
1 tablespoon teriyaki sauce, or more to taste
¼ teaspoon garlic salt, or to taste
freshly ground black pepper to taste

Steps:

  • Heat olive oil and butter in a large saucepan over medium heat. Cook and stir mushrooms, garlic, cooking wine, teriyaki sauce, garlic salt, and black pepper in the hot oil and butter until mushrooms are lightly browned, about 5 minutes. Reduce heat to low and simmer until mushrooms are tender, 5 to 8 more minutes.

Yield Makes 24 stuffed mushrooms

24 large white mushrooms
1/2 to 3/4 pound fresh, cooked crab meat, flaked or chopped
4 oz cream cheese (lowfat or regular), softened
1 teaspoon mayonnaise
minced onion to taste
Tabasco to taste
finely chopped celery or minced garlic, if desired
1/2 cup Parmesan cheese (preferably freshly grated)
salt to taste

Steps:

  • Preheat the oven to 350°F. Remove stems from the mushrooms. Wipe the caps clean. Arrange the caps, upside down, in single layer in a baking dish, preferably glass.
  • Rinse and finely chop the stems. In a mixing bowl, combine chopped stems with crab, onions, cream cheese, mayonnaise, and Tabasco. Add a little celery or garlic if desired. Salt to taste. Fill each mushroom cap with some of the mixture.

1 tablespoon minced garlic
2 tablespoons dried parsley
½ cup shredded Monterey Jack cheese
½ cup softened butter
½ cup dry bread crumbs
1 (16 ounce) jar Alfredo pasta sauce

Steps:
