1/2 cup vegetable oil
1/2 onion, cut into 1-inch chunks
1/4 cup firmly packed brown sugar
1/4 cup red wine vinegar
2 tablespoons catsup
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
4 bacon slices
1 spinach bunch, washed, trimmed, torn into bite-size pieces
1 1/2 cups bean sprouts
6 mushrooms, sliced
4 green onions, sliced
1/2 cup sliced canned water chestnuts
2 hard-boiled eggs, chopped
1/4 cup dry-roasted sunflower seeds

Steps:

  • Puree first 7 ingredients in blender or processor until smooth and emulsified. Set dressing aside.

1 teaspoon sugar
Kosher salt
1/2 cup coarsely chopped walnuts
1/4 cup thinly sliced red onion
One 5-ounce container baby spinach
4 ounces white button mushrooms, trimmed and thinly sliced, about 1 cup
3/4 cup grape tomatoes, halved
1 tablespoon red wine vinegar
1 tablespoon good quality extra virgin olive oil

Steps:

  • Combine 1/4 cup juice with the sugar and 1/4 teaspoon salt in a small nonstick skillet. Bring to a simmer over medium-high heat and cook, stirring occasionally, until the mixture reduces slightly, about 5 minutes. Add the walnuts and continue to cook, stirring, until the nuts are coated and dark and the liquid evaporates in the skillet, about another 5 minutes. Transfer to a baking sheet to cool. When cool, break apart with your hands.
  • Meanwhile, soak the red onion in ice water for about 10 minutes; drain and pat dry. Place the baby spinach in a serving bowl and top with the onions, mushrooms, tomatoes and walnuts. 4 ounces blue cheese
6 slices of thick-sliced bacon
1 boneless chicken breast, pounded to 1/2 inch
1/2 small red onion, sliced in thin rings and separated
2 1/2 ounces texas toast brand caesar-flavor croutons
1/4 cup honey mustard dressing or 1/4 cup vidalia creamy onion dressing

Steps:

  • Fry the bacon to chewy-cooked, then cut into chunks.
  • Drain pan of all but 1 tablespoon of drippings, leaving bits in pan.
  • Pan-fry the chicken in drippings, 4 minutes on each side. Slice.
  • Let chicken cool to room temperature while you assemble the other items.
  • In large bowl, toss the spinach, bleu cheese (to taste), bacon, and onion.

12 jumbo cooked and peeled shrimp
2 Tbsp butter
1 tsp shrimp seasoning or season salt
4 oz baby spinach
4 oz mixed baby greens
1/2 c frozen peas, thawed
4 hard boiled eggs, peeled and quartered
1/2 c seasoned croutons
4 slice cooked bacon
1/3 c mayonnaise
2 Tbsp red wine vinegar
1/4 c brown sugar, firmly packed
1 Tbsp water
1 Tbsp parmesan cheese

Steps:

  • 1. Mix mayonnaise, brown sugar, vinegar and water in microwave container and microwave on high for 1 minute. Stir and microwave again for 30 seconds or until dressing becomes light brown in color. Set aside.
  • 2. Melt butter and seasoning in saute pan. Saute shrimp for 3 minutes to heat through and coat shrimp. Set aside.
  • 3. Arrange half of greens and half of spinach in each of 2 large salad or pasta type bowls. Arrange egg wedges, shrimp and peas on greens. Drizzle dressing on salad. Garnish with croutons. Sprinkle with parmesan cheese.
