1 tablespoon vegetable oil
1 medium onion, chopped
1 pound ground beef
1 clove garlic, crushed
1 pound eggplant, diced
¾ cup sliced carrots
¾ cup sliced celery
2 (14.5 ounce) cans Italian diced tomatoes, drained
2 (14 ounce) cans beef broth
1 teaspoon sugar
½ teaspoon ground nutmeg
1 teaspoon salt
½ teaspoon ground black pepper
½ cup dry macaroni
2 teaspoons chopped fresh parsley
½ cup grated Parmesan cheese

Steps:

  • Heat the oil in a skillet over medium heat, and cook the onion, beef, and garlic until beef is evenly brown. Drain grease, and mix in eggplant, carrots, celery, and tomatoes. Pour in beef broth. Mix in sugar, and season with nutmeg, salt, and pepper. Cook and stir until heated through.
  • Mix macaroni into the soup, and continue cooking 12 minutes, or until macaroni is al dente. Mix in parsley. Top with Parmesan chreese to serve.

2 tablespoons olive oil, divided
1 medium onion, chopped

1 package (12 ounces) frozen fully cooked Italian meatballs, thawed
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup reduced-sodium chicken broth
2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme

1 pound Italian sausage
2 medium onions, peeled and cut into chunks
2 small fennel bulbs, fennel fronds removed, cored, and thinly sliced
2 cloves garlic, minced
1/4 teaspoon fennel seed
4 cups low sodium chicken broth
1 (14-ounce) can Italian plum tomatoes and their juice
1 cup uncooked small pasta such as tubetinni
1 (14-ounce) can canellinni beans, drained and rinsed
1/2 cup loosely packed, roughly chopped Italian parsley leaves
Coarse ground salt and cracked pepper
Pasta Morph, recipe follows
1 pound pasta, cooked to al dente, reserve 1 cup cooking water
Reserved sausage, onion, and fennel mixture
Salt and coarsely ground black pepper
1/2 cup unseasoned bread crumbs
1/4 cup finely grated Parmesan

Steps:

  • Remove the sausage from the casing. Place in a large soup pot or Dutch oven. Turn heat to medium, cook, stirring constantly until browned, about 5 to 7 minutes. Drain on paper towels to remove excess fat. Add onions, fennel, garlic and fennel seeds, toss to combine. Cover and cook, stirring every few minutes until fennel and onions begin to soften, about 12 to 15 minutes. At this point remove 1/2 of the mixture and reserve it for the Pasta Morph.
  • Add chicken broth and tomatoes to the remaining sausage/fennel mixture. Break tomatoes apart with spoon. Bring to a boil, add pasta. Bring back to boil again, reduce to a strong simmer. Cook 8 minutes or until pasta is almost done. Add cannelinni beans and parsley. Cook until flavors have come together and pasta is cooked through. Taste and adjust seasoning with salt and pepper.
  • Toss the pasta and reserved sausage mixture in a large bowl. Add heated pasta water, a little at a time, until a sauce consistency is achieved. Season with salt and pepper, to taste. Top with bread crumbs and cheese.

I used some canned chicken broth and when I ran out, I used Better than Bouillon Chicken Base. It was delicious. I used boneless, skinless chicken thighs.

7 cups chicken broth
1/2 cup rice
3 medium carrots, sliced 1/8-inch thick
3 stalks celery, sliced 1/4-inch thick
2 small zucchini, sliced 1/4-inch thick
6 tablespoons butter or 6 tablespoons margarine
6 tablespoons flour
2 cups milk or 2 cups half-and-half
4 cups cooked chicken, chopped into bite-sized pieces
1/2 cup green onion, thinly sliced
salt and pepper, to taste
1/4 cup parsley, minced

Steps:

  • In a 5 qt kettle over high heat, bring broth to boil.
  • Add rice, cover, and reduce heat.
  • Simmer for 10 minutes.
  • Add carrots, celery, and zucchini, cover and simmer until veges are crisp-tender(about 10 more minutes).
  • In a small pan, over medium heat, melt butter.
  • Blend in flour with butter and cook, stirring until bubbly.
  • Gradually stir in half-and-half.
  • or milk. Stir in 1 C of broth from soup mixture. Continue cooking and stirring until sauce boils and thickens. Add to soup mixture.
  • Add chicken and green onions. Season to taste.
  • Cook until just heated through.

1 1/2 teaspoons salt
1/2 teaspoon pepper
1/4 teaspoon nutmeg

  • Brown beef and onion.

1 medium eggplant
1 garlic clove, minced
1/2 cup chopped carrot

1 (28 ounce) can pear shaped Italian-style tomatoes
2 (14 ounce) cans beef broth
1 teaspoon salt

Steps:

6 to 7 Cups Chicken Broth
½ Cup Rice
3 Medium Carrots, sliced
3 Stalks of Celery, sliced
2 Small Zucchini, sliced
6 Tbsp Butter
6 Tbsp Flour
1 Pint Half and Half or light cream
4 Cups Cooked Chicken, chopped into ¾" pieces
½ Cup Green Onions, thinly sliced
¼ Cup Parsley, finely chopped

Steps:

  • In a 5 qt. pot heat chicken broth to boiling. Add rice, cover, reduce heat and simmer for 10 minutes. Add carrots, celery, and zucchini. Simmer covered until vegetables are tender (about 10 minutes). To make a white sauce, melt the butter in a medium saucepan, and blend in the flour. Cook until bubbly (stir constantly). Remove pan from heat and slowly blend in the cream. Add approximately 1 cup of broth from the soup pot. Return the saucepan to the heat and stir until the mixture comes to a boil and thickens. Slowly add the mixture to the soup pot while stirring constantly. Add the chicken pieces, and green onions. Add salt and pepper to taste. Heat until chicken is warmed through. Sprinkle with parsley before serving.
