This is an authentic Swedish pancake recipe that was taught to my father by his mother, who was born in Sweden. My father then passed it to me. Kids love them. Never any leftovers when I make them. To serve, you can spoon melted butter over pancakes and sprinkle with sugar, or serve with lingonberry sauce. You can also use the batter to make crepes.

SIMPLE SWEDISH PANCAKES
I grew up in Little Sweden, USA, and my great-grandparents on my Mom's side were all from Sweden. This is the recipe I grew up with (I added the nutmeg as I like nutmeg). Not sure why they're called "Swedish Meatball" - they just taste like great, juicy burgers! We just made these in a skillet on med-high (5 mins per side) and they came out perfect! Cooking Light suggests to eat these on potato rolls or served over egg noodles and to top with 1 tablespoon of sour cream each. We had them on toasted rolls with a little cheese and spinach. Also, mine only made 5 servings (but I like thick burgers!).

- Soak bread crumbs and seasonings in water and ½ cup cream for 10 minutes.
- Add pork, egg and parsley.
- Mix well until blended.
- Shape into 8 round flat patties.
- Melt half of margarine in large skillet.

- Place on warm platter and keep warm.
- Peel and thinly slice onions.
