1/2 pound (2 sticks) unsalted butter, softened
1/2 cup natural cane sugar
2 teaspoons sea salt
1/2 cup maple syrup
2 teaspoons pure vanilla extract
2 1/2 cups all-purpose flour
1 1/2 cups chopped pecans
1/3 cup demerara or turbinado sugar, plus more for sprinkling on top

  • Cream the butter, natural cane sugar, and 1 teaspoon of the salt in the bowl of a mixer fitted with the paddle attachment or in a large bowl with a wooden spoon and beat until light and fluffy (see Know-how, page 315).
