salt and ground black pepper
⅓ cup ketchup
⅓ cup seasoned rice vinegar
1 (8 ounce) can pineapple chunks, drained with juice reserved
2 tablespoons brown sugar
4 cloves garlic, minced
2 teaspoons hot chili sauce (such as Sriracha®)
1 teaspoon soy sauce

My friend, Jennifer, made this for me while I was recuperating from the birth of my second daughter. It was so delicious (and SO EASY)that I just HAD to have the recipe! Thanks, J-Lo! I have also made this with Hormel tenderloins and cut in half (lengthwise)

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 5

2 lbs pork tenderloin
1/2 lb bacon, sliced thin
1 large onion, sliced thin
1/4 cup soy sauce
12 -16 ounces apricot preserves

Steps:

  • Wrap tenderloin in bacon.
  • Place onions in bottom of 9x13" casserole dish.
  • Lay tenderloins on top of onions.
  • Mix soy sauce and apricot preserves and pour on top of wrapped tenderloins.
  • Bake at 350 for 45-60 minutes.
  • Place sliced tenderloin on top of rice and garnish with onions. Serve with white rice.

Tips:

  • Choose the right cut of pork: Pork tenderloin is a lean and tender cut of meat that cooks quickly and evenly. If you can't find pork tenderloin, you can also use boneless pork chops or boneless pork shoulder steaks.
  • Marinate the pork: Marinating the pork in a mixture of olive oil, soy sauce, brown sugar, garlic, and ginger will help to tenderize the meat and add flavor.
  • Cook the pork over high heat: Pork tenderloin should be cooked over high heat so that it browns quickly and evenly. This will help to keep the meat juicy and flavorful.
  • Use a meat thermometer: The best way to ensure that the pork is cooked to the proper temperature is to use a meat thermometer. Pork tenderloin should be cooked to an internal temperature of 145 degrees Fahrenheit.
  • Let the pork rest before slicing: After cooking, let the pork rest for a few minutes before slicing. This will help the juices to redistribute throughout the meat, making it more tender and flavorful.

Conclusion:

Sweet and sassy pork tenderloin is a delicious and easy-to-make dish that is perfect for any occasion. The tender pork is coated in a flavorful marinade and then grilled or roasted until cooked through. The sweet and tangy sauce adds a delicious finishing touch to this dish. Serve sweet and sassy pork tenderloin with your favorite sides, such as mashed potatoes, roasted vegetables, or rice.
