1 ½ pounds sweet potatoes, peeled and cut in 1/2-inch cubes
1 tablespoon olive oil
1 tablespoon melted butter
¼ teaspoon ground cinnamon
1 pinch black pepper
1 pinch Sea salt to taste
1 sheet Reynolds Wrap® Aluminum Foil

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with Reynolds Wrap® Aluminum Foil. Set aside.
  • Wrap each sweet potato cube with a bacon slice, holding in place with a toothpick. Place on the prepared baking sheet, toothpicks facing up.
  • Combine the olive oil, melted butter, cinnamon and pepper, stirring until well mixed. Drizzle the mixture over the sweet potato bites. Sprinkle with sea salt. Loosely tent the toothpicks with damp paper towels and wrap the baking sheet with Reynolds Wrap® Aluminum Foil, being careful not to pierce the foil. Bake until the potatoes are just tender, about 20 minutes.
  • Remove the foil and paper towels and return to the oven; bake until the bacon is crispy and the fat starts to render, 15-20 more minutes. Blot the excess fat with the paper towels, then serve.

1/4 cup butter (melted)
1/2 Teaspoon salt
1/2 Teaspoon cayene pepper
1/4 Teaspoon cinnamon
2 large sweet potatoes (peeled and cut into 1 inch squares)
1/2 cup brown sugar
1 lb thin bacon strips cut in half

Steps:

  • Preheat oven to 350 degrees.
  • Mix the melted butter, salt,cayene pepper and cinnamon in a medium bowl. Add the potatoes and toss to coat.
  • Place the brown sugar in a shallow bowl. Wrap one piece of bacon around a sweet potato cube, secure it with a tooth pick. Roll the bacon wrapped sweet potato cube in the brown sugar so all sides are coated. Repeat for each cube.

1 lb small red potato
1 1/2 teaspoons chopped fresh rosemary
1 tablespoon olive oil
1/2 teaspoon salt
fresh groung black pepper
1 lb of thick cut bacon
1 cup sour cream
1 teaspoon hot sauce

Steps:

  • Preheat oven to 400.
  • Wash and dry potatoes, cut them into 1" pieces. (try keeping them the same size).
  • Put potatoes in a medium size pot cover with cold water and bring them to a boil. Season with salt and pepper to taste. Once the water begins to boil, cook for about 3 to 5 minutes, or until almost done. You do not want to cook them all the way as they will continue cooking in the oven.
  • Drain potatoes and put them in a large bowl. Add rosemary, olive oil, salt and a few grinds of fresh black pepper. Toss potatoes until they are evenly coated.
  • Cut the bacon in half. Wrap each piece of bacon, secure with a toothpick. (hint: soak toothpicks in water for about 30 minutes so that they do not burn). Put potatoes on a baking sheet lines with foil, might need 2 baking sheets.
  • Cook potatoes for 15 minutes, then flip each piece. Cook for another 10 - 15 mintues or until the bacon is cooked throught and crisp.
