Seared Steak, Pepper & Onion Fajitas (from Fine Cooking) image

Great weeknight recipe! Goes together quickly and is easy and delicious. I love the crust my cast-iron skillet provides. Sometimes I use Penzey's Southwest seaoning in place of the cumin mixture.

These are the best fajitas ever, and a much healthier version of the typically pan-fried fajitas you find in restaurants. I also like to serve them in flatbreads instead of tortillas. -Erin Michniacki, Manhattan, Kansas

Tips:

  • Choose the right flank steak: Look for a flank steak that is about 1 1/2 to 2 pounds and has a nice marbling of fat. This will help the steak stay tender and juicy while cooking.
  • Slice the steak thinly: This will help the steak cook quickly and evenly. You can slice the steak yourself or ask your butcher to do it for you.
  • Marinate the steak: Marinating the steak in a flavorful mixture of spices and liquids will help tenderize it and add flavor. You can use a variety of marinades, but a simple mixture of olive oil, garlic, lime juice, and cilantro is always a good choice.
  • Cook the steak over high heat: This will help the steak develop a nice crust and stay tender on the inside. You can cook the steak in a skillet, on a grill, or under a broiler.
  • Don't overcook the steak: Flank steak is a thin cut of meat, so it cooks quickly. It's important to not overcook the steak, or it will become tough and chewy. Cook the steak for just a few minutes per side, or until it reaches an internal temperature of 135 degrees Fahrenheit for medium-rare.
  • Serve the steak immediately: Flank steak is best served immediately after cooking. You can serve it with a variety of sides, such as tortillas, rice, beans, and guacamole.

Conclusion:

Sweet and spicy flank steak fajitas are a delicious and easy-to-make meal that is perfect for a weeknight dinner or a weekend party. The flank steak is marinated in a flavorful mixture of spices and liquids, then cooked over high heat until it is tender and juicy. The steak is then served with a variety of toppings, such as peppers, onions, cheese, and guacamole. Fajitas are a fun and interactive meal that is sure to please everyone at the table.
